Vegetarian batch cooking no beans

My elderly dad is vegetarian, can no longer tolerate beans/lentils, and doesn’t seem to be cooking much or eating well.

I’d like to start batch cooking freezer meals for him but struggling for ideas!

He does eat cheese but doesn’t seem to like cheese sauces (I’ve never known him eat macaroni cheese for example).

He likes Indian or Mediterranean type of food, not keen on pizzas/anything too heavy.

Any suggestions please?

I havn't been for a while, and you may prefer home made, but Iceland always have a pretty decent selection of veggie ready meals.

Its digestion issues I’m afraid - he actually loves beans and lentils but they upset his stomach now. A little bit is ok but really not much.

He won’t really eat shop bought ready meals as he thinks they’re over-processed, I’ve tried him with Cook frozen meals before but realised he was just politely accepting them then giving them to a neighbour ffs.

So I really do need to cook for him I think.

We generally have tofu scramble in toast for breakfast. Chopped veggies cooked first in a pan (peppers, courgette and tomato) with garlic/ garlic and ginger for DH ( ready chopped frozen) then mashed up tofu and herbs added and cooked. Once done nutritional yeast on top. I try to prepare the veggies the night before so it doesn't take very long.

Does he have an air fryer? I sometimes make individual sized spanakopita in a sort of samosa style then bake for about 5 or 6 minutes in air fryer from frozen.

Come to think of it, samosas would probably work for this too.

My elderly.dad and his.older sister both have air fryers and love them as a convenient way to cook for one. Admittedly, I think they both use them for chicken a lot!!

When my dad had cancer and was struggling with food I baked him nutritionally dense muffins and froze them. He has a sweet tooth and they are relatively small so worked well. Could you do that?
