Soups that require no peeling/minimal prep

Looking for some ideas- got a lovely soup maker combi Ninja thing and I have just used it for the first time

I’m a prepackaged veg person. I cook a lot ‘from scratch’ as in I don’t use pre-made sauces or marinades….but take shortcuts with lazy garlic and pre-diced and chopped vegetables.

I made a lovely parsnip soup but leaning over the sink peeling parsnips for what should be an easy lunch was just too much of a ballache for me with a toddler roaming around the kitchen. I know I’m lazy, but I just can’t be bothered.

Can anyone recommend some hacks for veg soups where I can just chop and bung in without peeling and prep?

I was also thinking of just using frozen aunt
bessie style parnsips defrosted for my parsnip soup v2 - will that work?

We eat a lot of daal already so nothing lentilly and we aren’t keen on other pulses and corn.

Roasted butternut squash and red pepper soup. I don't peel the squash. Just chop into about 1/2 " square pieces - chop peppers into slightly bigger chunks, roast until BNS is soft along with several garlic cloves and some olive oil. Blitz in the blender with a couple of stock cubes dissolved into hot water until smooth. Season to taste. No fibrous texture if you keep it going long enough and it turns a gorgeous orange colour!

I've just bought a bag of frozen mushy peas in Morrisons to make pea and ham soup, I've done it before with tinned mushy peas, it cuts out the soaking and lengthy cooking time of split peas.
If you use frozen carrots ( I've spotted them in Morrisons, although I like peeling and chopping veg) and frozen onions all you'd have to do would be peel and dice a couple of potatoes.

-A cauliflower, an onion, a largish potato, couple
of teaspoons of zaatar and veg or chicken stock. You can roast the cauliflower with the spices over it first (but I often cba).
Finish with a couple of teaspoons of mascarpone once it’s blended. Fried streaky and walnuts on top if you’re feeling fancy.

-Large jar of decent passata, garlic clove, good
whack of sundried tomatoes or healthy scoop of sundried tomato paste, a few carrots. Can slow roast and fire in some actual tomatoes if you’ve got the oven on anyway. You’ll need loads though. Rosemary and thyme. Veg or chicken stock. Again, finish with the mascarpone (good use of a whole tub). This (to me) tastes almost identical to the beloved Heinz of childhood, but with added virtue and bouge 🤣

-load of carrots, tin of green lentils, veg stock. Looks like khaki, yet kids seem to really like it.

Lentil carrot and stock with brkth from a boiled gammon, blended with nice big chunks of gammon.

The minted frozen peas from farm foods make a lovely soup with some ham and stock also.

Cheap, quick and filling!

Frozen mushies! I bought some for having with fish but they take a while to cook, this is clever!

I make 2 soups which are sub 5 mins from start to bowl: spinach and garlic, and pea.

Basic recipe for both:

Boil the kettle
Chop and saute an onion (and a few crushed garlic cloves for the spinach soup)
Open the freezer
Add either frozen petits pois or frozen spinach to the pan with a generous glug of hot water from the kettle
Stir until defrosted - 1-2 min usually enough
Plonk it all into the Nutribullet with more hot water and half a Kallo veg stock cube
Blend until smooth and creamy
Season and serve

Both are nice with a swirl of greek yoghurt but both also very nice plain!
