What to do with a glut of sweetened cream and brandy butter?

DH went to Sainsbury's last night for a few bits and bobs and came back with several pots of their vanilla liqueur extra thick cream, brandy butter and brandy cream... I already have a trifle in the fridge from New Year's Eve so what else can I make with it all? Ideally looking for baking-type recipes I can freeze as I still have lots of sweet treats from Christmas so no 'make meringues' or 'serve with crumble' type answers please.

I’d knock up a massive boozy bread and butter pudding. White bread (or fancy expensive brioche) spread with brandy butter, sprinkle golden sugar and a pack of pre soaked in orange juice sultanas/ zesty bits in the layers. Cover in a raw custard ( equal amounts whole egg, golden caster, and whatever cream) and bake. It’ll freeze well or you can just scoff as you go.

The brandy butter will freeze well

How delicious 😋

I saw a full end fridge display of flavoured cream in my Sainsburys yesterday but didn't buy any- sounds like some delicious treats can be made!😊

The brandy butter will make nice topping for an apple crumble.
You could make fudge with the cream and some brandy butter.

InMySpareTime · 03/01/2024 07:16

By crumble topping I meant "use as the butter for the crumble topping" not serve with or over.

Make ice cream www.sainsburysmagazine.co.uk/recipes/desserts/ultimate-no-churn-ice-cream-three-ways and you won’t have to add the vanilla bean paste

This fudge is freezable https://realfood.tesco.com/recipes/salted-caramel-fudge.html

You could use it to replace butter and sugar in any baking recipe. I would do muffins as they freeze well and can easily fit into spaces in the freezer.

I love the fudge idea - I normally use the condensed milk method so it will be fun to try something different. Also, I LOVE apple crumble so it would be good to try it as a topping.
Not a fan of bread and butter pudding sadly so that one is out. @TheIsleOfTheLost - the problem is, I don't know how much sugar is already in it...

For those of you who recommended fudge, does it matter that it is extra thick vanilla cream?

Extra thick cream might need less butter as it already has more fat, and less cooking as it has less water, but should be fine.

Eat a spoon of brandy butter every time you walk past the fridge, and regret your life choices

Grin

Brandy cream lasts for weeks in a fridge if past experience is anything to go by. Not me - DH has a bit of a weakness for it plus an eye for a bargainHmm

TheIsleOfTheLost · 03/01/2024 09:35

I don't tend to stick to recipes, so I would just add what you have, taste, then decide how much more sugar you want to add. The proportions should be listed on the pot too, so you will know how much per 100g there is of sugar.

Hit chocolate or ovaltine topping with marshmallows - weekend treat

There are no regrets to be had with a life such as this.

Take a pack of digestives, squish a good layer of brandy butter between each pair of biscuits and freeze in a tub for later. It's not haute cuisine but it's a nice treat when it's gloomy and cold in February.

This is genius

I made chocolate truffles with rtc flavoured cream the other day and I've frozen them for treats later in the year.

I got some rtc plain double cream too and I'm going to attempt home made butter this afternoon. Best case scenario is cheap butter, worst case is I've lost 30p.....
