Help!.....my gravy has a bitter aftertaste

I'm a novice cook and I'm actually not very good!

I'm making a peat and potato pie for tomorrow night. Surely this is straight forward, right? Wrong!!

I got a recipe from Pinterest (it's a slow cooker one), now I may have gone a bit overboard with the beef stock......

Is there anything I can put to rescue it?

Have you tried more mud and less peat?

Sorry! I usually add a spoonful of English mustard to add depth but not sure what would make it bitter.

Some raspberry jam or similar to add sweetness?

Can you tell us how you made the gravy in the first place and we can maybe suggest something to add

Are you sure the peat is still fresh? If it's over 3 million years old it has a bitter tang.
😄

Seriously, too much stock equals too much salt/umami. You could try removing a load of the liquid and watering down what's left.

I'd stick in some redcurrant jelly or even some jam or sugar!

Was there a lot of rosemary in it by any chance? I've had this before when I've overdone the rosemary

I've put some sugar in it and it's definitely not as bitter. Thanks everyone!
