Low cal food for work - ideas

Hi all

I’m really trying to save money and calories in the new year!

I need some inspiration on healthy low cal options for work. I have access to a fridge, kettle and a microwave. I work long shifts sometimes eating all 3 meals here.

so far I’ve thought of fairly unimaginative ideas such as overnight oats, wraps etc. but would love to hear other ideas or perhaps sites for inspiration. I don’t have an awful lot of time due to said long shifts and a young child, but obv recognise prep will be key to making this work

If you have access to a microwave I would definitely consider making a few big batches of soup. Filling, cheap, super easy to make and can pack in a ton of veg.
I often roast a load of veg and chickpeas with some garlic and paprika and add to cous cous with some fresh herbs for a salad. Or add a tin of chopped tomatoes to the veg for a kind of stew.
Fritata also makes a good lunch option and will last in the fridge for 3 days once cooked.
I'm also a fan of the mumsnet favourite massive salad for lunch. Just vary the protein and salad veg to avoid repetition. I tend to go for either tuna, egg or Cajun/lemon and garlic/paprika/tandoori chicken breast, cumin roasted chickpeas.

Soup is great and so easy!

Rice or pasta salads for a more substantial meal.

Overnight oats for breakfast or fruit salad with yoghurt?

I really like some of the recipes on ambitious kitchen (Facebook)

I've made several of the chopped salads from there and they've all been lovely apart from one that used quinoa, which was soggy! There's always enough to last a few days and it's easy to swap things in and out and make use of what you've got in the fridge.

Soup, my preferred salad option is quinoa/bulghar wheat with roast veg topped with some kind of protein.
I'm lazy and will often cook a veggie chilli or ratatouille for dinner that will then also be a couple of lunches worth.
If no prep time I'll have a selection - oatcakes, pot of humous, crudites, tomatoes, a few olives. I have a few little pots to separate them.

Merchant Gourmet quinoa pack - add finely chopped red onion, red pepper, beetroot. Oil and herbs. Will last a few days - I add feta and fresh leaves on the day.

Yes to Spanish omelette.

Oatcakes, cream cheese, grapes, radishes, celery.

This is a ridiculously thick, quick and filling soup, I’d actually omit the flour next time. I got 4 portions out of this, rather than 2, as it was so filling, so it was only 120 calories per portion. The Lentils add protein and are great for bowel Heath, but they break down completely so aren’t noticeable.
