Side of salmon - bought defrosted - can I cook and freeze?

I bought a side of salmon which has today's date on. Realistically we are only going to eat half of it.

When I bought it (Aldi) it didn't have the freezable sign and the description is that it is a defrosted side of salmon - sold from the fridge as fresh.

So I can't freeze it.

However, if I cook it can I either

Keep it in the fridge to eat over the next few days and if so - how long would I have to eat it? (Would I then have to eat it cold?)

Or

Freeze half of it once cooked? - if so what is the best way to use up when ready to eat?

Basically how can I avoid wasting half a side of salmon please?!

Cook it and fridge it for 2-3 days, you can reheat it after cooking but only once.
Or cook and freeze, then defrost and reheat on the day of eating.
Either way, reheating salmon is going to dry it out so if you are wanting to do this I'd recommend doing it in a dish that has sauce.

Frozen cooked salmon works well as fishcakes with loads of mash and parsley. Can oven bake or egg and breadcrumb before shallow frying. Serve with loads of parsley sauce.

If you have the time, I'd make fish cakes or fish pie. The both freeze beautifully and rich cakes in particular are a brilliant freezer standby.

So cool and freeze - any tips on freezing as this is the most likely option as day has gone on
