Freezing rice safely

I've been given some really useful receipe ideas on this site for my 1 year old, and lots of people have mentioned risotto. I've read somewhere that you need to be quite careful with old rice in case of food poisoning, so can anyone tell me how to freeze and reheat it safely?

I believe the thing with rice is how long it's left at room temperature. If it's left too long I think it grows bacteria that then can't be killed no matter how you reheat it. Hopefully a scientist type will come along to tell me if I'm right.

I make and freeze risotto for my ds and basically I just make sure I freeze it as soon as it's no longer hot - then defrost and reheat in the microwave.

Freezing and then reheating until piping hot should be fine. The problems with rice are when you are eating it cold like in a rice salad. with that you need to make sure you cool the rice straight away rather than letting it cool.

The advice already on here is spot on. Basically don't leave it around for ages between cooking and freezing. Cool as quickly as possible.When you re-heat it make sure you re-heat until piping hot.

The dangers with rice are more with eating cold left-overs or serving it cold in salads etc. without cooling it quickly enough.

If you want to use rice cold in salads etc., then the safest way to do is cool the rice down in cold running water after it is cooked.
