Roast potatoes prep two days ahead?

I have previously par boiled, fluffed and frozen which was ok but cooking from frozen took forever and they were a bit soggy.

Im reading a few recipes (eg the goddess that is Mary berry) saying you can par boil and roast just to lightly done the day before and then roast again in hot fat on the day but I could really do with making a good start today so not sure if two days in the fridge will ruin them.

So two days before what would you do potato wise?

  1. par boil fluff and freeze
  2. part roast and the leave in fridge until 25th and roast again
  3. something else

The other issue with freezing is that we are travelling tomorrow to family so they will likely part defrost on route which won’t be ideal.

I parboil and fluff on Christmas Eve and put into fridge. Rosa st as normal Christmas Day.

I did this a couple of weeks back, worked very well. Actually they were nicer than normal as extra crispy.

Just don't cook them too much the first time! Just until they're turning a little golden.

@aubergineman did you do them the day before or two days in advance? And did you add more fat when you roasted the second time?

@Asifiwouldnt I did them the day before, but can't see it would make much difference. We regularly reheat roasties in the airfryer days later.

Didn't add any more oil, but they were quite oily to begin with

@Asifiwouldnt Just googled this question and this came up. Just par boil, fluff up and allow to cool before coating in oil and store in the fridge until you can roast them
