Freezing flat leaf parsley for salads

I have started putting some flat leaf parsley as a garnish in my salad, but I find I am throwing alot away as the rest of the bag wilts before I use it.

I looked online for how to freeze it but can only find the idea of freezing it in ice cube trays to use for soups and stews.

Does anyone know if it is possible to freeze it so it will defrost 'dry' to use in a salad please?

It won’t work-foods like this have a high water content and the cells break/rupture on defrosting (I’m not 100% sure if the scientific explanation). It’s why you don’t add lettuce when freezing sandwiches

You can freeze herbs to use in cooking but not to put in salads.

If you like the taste of parsley on salads you could use it to make a pesto, or parsley-croutons, and then freeze those. But I don’t think the leaves themselves will freeze and be usable in salads.

Some herbs will keep quite well if you put them in a glass (or even small vase) of water, like a little green posy. I've not tried parsley but basil will sometimes grow roots!

Yeah doing it as a pesto works really well. My Dh does this with parsley, roasted garlic, olive oil, capers.

You can also buy it in growing pots rather than bags which you can use for linger, or even split and pot on into multiple plants.

this - it works even better if you keep the plastic back over the top of the bunch. Parsely lasts about 2 weeks in the fridge door like this, also coriander/cilantro
