Dinner party menu ideas with lots of restrictions

Invited several friends to dinner the day before Christmas Eve. The group has a number of dietary requirements between them. Where possible, I'd like to serve the same food to all, tho hapoy to tweak/adapt where necessary.
Don't want to compromise the quality of the meals for those with no allergies etc.
looking for starter, main course, dessert that meet the following:

Gluten free
No cream, butter
No cows milk cheeses and another guest doesn't eat goats cheese
No mushrooms
No mustard
No prawns
No chocolate

The above are all allergies/intolerances. Smoked salmon tends to be over used with this group so would rather avoid.

Having fed this group several times, looking for some new ideas. Want 'dinner party' quality rather than buffet as it is a birthday celebration for one and anniversary celebration for two others. Thanks

Delia’s chicken basque is delicious and simple. All in one pot, serve with a green salad. Have some olives, cured meats, tortilla, etc to start.

Just be aware that couscous is made from semolina, a granule of durum wheat, so is not gluten free.

Pud i would make a crumble topping using marg or olive oil with flaked almonds baked on a tray.
Poached winter berries with cinnamon.
The dairy frees can have it and gluten free can have berries served with raspberry sorbet.

Thank you, more lovely ideas. I made Greek last time I catered for this group in the summer, agree it is perfect for these requirements but don't want to repeat so soon.

As someone up thread correctly gathered and sorry I should have said in OP, we do cater for each other fairly frequently which is why it becomes difficult to think of something different that meets dietary requirements whilst being special for all.
We will be at least 6 possibly 8 people so am a bit daunted by the prospect of stir fries for so many.

Re question about butter & cream.... they don't eat those or cheese made of cows milk but are ok with regular milk and a certain brand of plain yoghurt. Sounds weird but clearly a thing as I have another friend who is exactly the same.

Any reason not to make the crumble gluten free? It is fine to use a gf flour for a crumble.

Another option, perhaps more for the summer though is a paella without prawns and making sure the stock is gf.

For mains I tend to go for something with rice or potatoes. Add in some meat and veg. Dessert is trickier for both gf and dairy free.
