What can I do with (frozen) banana bread?

We had family visiting a while ago, with young children who (they claimed) ate lots of fruit. Turned out that although they did like fruit, they really didn't like bananas, and I'd bought loads of them!

I ended up making banana bread - 2 loaves. One was eaten at the time, but the other one has been languishing in my freezer for months now. With Christmas rapidly approaching, I'm trying to free up space in the freezer, so want to get rid of it. I can't bring myself to just chuck it, and there isn't an occasion to just defrost it and eat it as cake - neither DH nor I are big cake fans.

So I was wondering about turning it into some kind of Christmas dessert. I had thought about a trifle, using the bread as the base. But if I did that, what would the other layers be? And what alcohol would you use? (It would only be for adults, so no need for anything child-friendly).

I'd thought about maybe using rum, and then making a white chocolate custard for one layer.

Anyone have any better ideas? (I don't really make desserts very often, so definitely need some inspiration!)

Oh wow, trifle sounds lovely! How about malibu as the rum for the base? Can I get an invite to eat trifle with you?!

That sounds lush. Is it a cake texture or bready?
Might you eat it for breakfast?
Bread & butter pudding?

id go with the trifle - add in pineapple/ pineapple jelly with the banana and make it a tropical trifle with the rum

It's more cakey in texture than bread - no idea why it's called banana bread!

I wonder if I could make a coconut custard? Would using coconut milk (canned) work?

That sounds lush! I think the other thing you could do is turn it into a sort of banoffee desert (assuming it’s not sliced already). Toffee sauce, walnuts across the top and fresh banana.

I'd do a rum with banana bread rather than malibu. The rum version sounds amazing! Malibu maybe more polarising.

Nb careful with pineapple and jelly, if you're using real fruit and not a packet of pineapple jelly. There's There's enzyme in it which prohibits setting. So too with kiwi, and papaya.

Or, a banana bread french toast?

I’d do a banoffee trifle. Layer of banana bread , soak in alcohol of choice, layer of banana, layer of caramel sauce, layer of custard and layer of cream. Grating of chocolate to finish.

Banana bread is also lovely toasted for breakfast. (Buttered and marmaladed) Or totally lush when just sliced and spread with cream cheese... for lunch or at any time at all.

Soak the banana bread in baileys. Add custard and cream.

I make this with mini rolls and it's the best thing ever.

Came across this just now:

Frozen pineapple coated in white chocolate and shredded coconut which sounds like it could work!

So I'm thinking:

Layer of banana bread, drizzled with soaked in golden rum
Layer of said frozen pineapple (which I'll thaw, obviously!)
Thin layer of pineapple jelly (have checked, and Asda stock a Hartley's pineapple jelly)
Layer of whipped cream - possibly with some white chocolate and/or coconut cream added in
Sprinkle of grated dark chocolate on the top
