Easy vol-au-vent fillings

I'm doing a buffet on Boxing Day in addition to hosting on Christmas Eve and Christmas Day, so I'm trying to keep it as easy on myself as possible (whilst of course, still being delicious). I'm doing vol au vents - I have 3 packs of 18 in the freezer. What are tasty fillings that can either be bought ready made, or can be made very simply by just combining a few things. I was wondering whether the premade tubs of sandwich fillings might be OK? Maybe prawn mayo, egg mayo and coronation chicken? Or do I need something a bit more special?

I've never once had a vol au vent and I really must admit, this post has now made me want to 😂

My DC has a very limited diet too so I'll be intrigued to maybe try making a few different types to see if I can somehow find a new food to add to her very small list 🤞

it kind of depends on how big they are and if you want them to be nibbles or a main course, but either way, what every you put in needs to be saucy/creamy or you will end up with a horribly dry mouth after the second bite

Any kind of protein stirred into a white sauce with chopped parsley on top (but chicken and/or ham are my favourites

Roast chicken bits and olive tapenade

prawn cocktail with capers on top

bits of steak with bbq sauce or gravy or mustard/horseradish mixed into creme fraiche

For quick fillings use supermarket fish pates, crab, salmon etc, and add a garnish if liked...eg herbs, prawns, flakes of honey roast salmon, capers

A smooth chicken or duck pate combined with a little cream cheese or mayonnaise to a mousse texture, garnish with olive or gherkin slices

Finely chopped cooked asparagus combined with mayonnaise or hollandaise sauce.

Lumpfish caviar topped with a little sour cream.

I do the cream mushroom filling...cook down chopped mushrooms... add little veg stock cube...double cream...salt crack pepper...simmer til slightly thick.
I also do ball mozzarella tomato and basil (with small dollop of pesto)..i warm the mozzarella ones up in oven but shroom ones i just heat in pan

Joining the vol-au-vent love. My parents had dinner parties in the 70's. So many memories of my brother & I devouring cold leftovers the next morning!

The best one involved lobster mornay. Phwoar. But really, any pie filling will do.

I've got a chicken & leek pie in the oven (it's 8.30pm here) and I'm know wishing it was a giant vol-au-vent. Alo I just like saying & typing vol-au-vent.

I found frozen jus-roll cases in The Range of all places at Christmas- cracking them out today for a neighbourhood party tomorrow! I’m so happy - I too have been looking for years!

Wish I could remember my late mother’s mushroom & bacon filling recipe…

The ready-to-bake cases seem to be more available now!

I like any filling in a creamy or cheesy sauce, really. Also a tomatoey sauce with a bit of spice and chopped black olives.

Vol-au-vents must be coming back into fashion! Something I whole heatedly support.

Now we need a TV chef to come up with a range of updated fillings alongside the old favourites.

The best vol au vents I've ever had were at a fab restaurant in Amsterdam, and were filled with escargot a la bourguignonne! Delicious! 🐌 🐌 🐌 🐌

An idea or two for summery fillings...
Roasted Mediterranean vegetables finely diced (or purée) or you could also use leftover ratatouille though don't include much liquid.

Egg mayonnaise with some diced ham or flaked mackerel.

Coronation chicken.

Tuna mayonnaise with chopped black olives, or capers.

I bought mine yesterday in Iceland. Also condensed soup in B&M. Whip up cream cheese until light and fluffy (might need a bit of milk) add finely diced bacon and crispy onion bits

I'm resurrecting this thread to ask if you cook the condensed mushroom soup ones after filling or bake the cases then add the filling afterwards?
I'm on a vol au vents bender and was talking to DS1 who can still remember some tuna ones brought to a bring and share they did in his sixth form and he's now 32...he came over glassy eyed with desire at the memory 😂

I would bake the vol au vents cases unfilled, meanwhile heat the sauce, then fill the cases with the hot sauce. I've not used condensed soup, only homemade fillings, but I can't see that it would be any different.

For serving cold, say with a Coronation Chicken filling, I'd bake the cases and let them go cold before filling them.

Baking the cases already filled might work for small bite size cocktail vol au vents.

Just wanted to bump this thread to say vol au vent cases (the frozen jus rol ones) are in the shops now. If you want some, grab them now, as they always seem to have disappeared when I go looking for them a couple of weeks before Christmas.
