Lasagna help

Hi all,

I am making a lasagna for dinner tonight. I will be putting it in the oven at about 7pm.

I need to make it around 2pm today.

Usually when I make lasagna it goes straight into the oven. My question is, once put together if I don’t cook straight away the last pasta layer starts to curl up because of the heat (hope that makes sense).

Also, do I just leave it out until 7pm? Can’t put it in the fridge as will be too hot. Do I let the sauce cool before putting together then straight in the fridge? If so how much longer will it take to cook?! It’s usually in for about 50 minutes.

So many questions over a lasagna 😂. It’s a special meal and really really want it to go well.

In this weather, I'd have no qualms about leaving it out of the fridge. Is your kitchen going to be unheated during the afternoon? Should be fine. I assume it's a meat-based ragu? If vegetarian, even less concern.

I don't think the pasta curling up is an issue. Maybe put extra sauce and cheese on the top to make sure it's completely covered.

It will be fine just out on the side between construction and ovening.

If the top layer curls you didn't put enough cheese on top. Use more cheese.

Cook it at a smidgen lower temperature for 10-15 minutes longer than you would if it was going into the oven hot.

Cover it with some tinfoil after cooking.

It’s fine just do everything you would normally do and when it’s cool enough put it in the fridge OR finish it and then reheat it. If you are one of those who boil the sheets then skip that step and layer it all up using uncooked sheets.

I think it’ll be fine - leave it on the side to cool and put it in the fridge if it gets cool enough. Would likely need an extra ten mins in the oven if it’s going from really cold.

Not sure about the curling - mine doesn’t! Are the pasta sheets on the top layer a bit dry around the edges perhaps? Make sure they’ve got filling right to the edge underneath them, and white sauce and cheese right to the edges on the top. If it still curls, try wetting the pasta sheets first? Or put the top layer on at the last minute?

I always make it a day in advance if I can, it tastes better if made early. It'll be fine just sitting out

I always make earlier in the day , as @YireosDodeAver says , add more cheese to weigh the top layer down , and make sure it’s covered right to the corners
More cheese is always the answer !
Leave it on the side in the kitchen , it will be fine

I always make in advance then fridge or freeze.

I use dry sheets of pasta so not had an issue with curling - I press it down slightly to ensure contact with the sauce so the pasta starts to absorb the moisture which 'sticks' it down.

Even if it does curl a bit, it will probably settle in the oven and still taste great.

I always make in advance and leave on the side to "steep". Tastes so much better. Cover with foil to keep moist. If pasta is curling, and others have said, it's because it's too dry. Meat sauce should be slack, as should the white sauce. I don't use cheese, only parmesan, and it's never dry. I also use fresh pasta which helps.

I will make and leave out but be sure to put more cheese sauce and cheese on the top and cover.

I use dry sheets, I think it’s the heat from underneath that makes them curl, I might give the sauce 20 minutes to cool before I put it together.

Fingers crossed it all goes well, I know it’s only a lasagna but the evening is a special one and I want everyone to be happy and have a lovely time.

Hope they like biscoff cheesecake or I am screwed 😂

Possibly the heat, but also the differential dampness - if the sheets are wet underneath but dry on top, the lower side of the sheet will slightly expand and soften, and the top side will stay dry, so it would curl upwards. Always nice to have a problem that can be solved with liberal application of cheese sauce!
