I am having friends round for dinner and can't quite find the perfect recipe for dessert so I am thinking a no bake cheesecake but made like this.

Bourbon biscuit base
A layer of cherries that have been soaked in kirsch
Cheesecake mix with kirsch in on top
Another layer of cherries
More cheesecake mix
Top with cream
decorate with chocolates round the edge and gold glitter

Will it set ok? any suggestions for any tweaks appreciated please

It depends how you make your cheesecake I think — my no-bake one is mousse-like, so probably wouldn't support a second layer of cherries.

Maybe try searching "Black Forest cheesecake".

The flavours sound fantastic, it's the amount of moisture that's going to unstick you.
Starting at the bottom, when you say bourbon biscuit base are you removing the cream middle from the biscuits? Why bourbon, why not just a chocolate cookie type biscuit?
Layers of soaked cherries will need good amount of draining.
Not sure about adding Kirsch to cheesecake mix, it will have a hard time setting?
Also - why not do a trial run and see how it works? Or are we talking this weekend!

I have used the purple pack Maryland cookies as a cheesecake base before and they work well so could be an alternative to Bourbons.

It would work better with kirsch soaked cherries on top. I think you will have a soggy bottom otherwise

I agree with PPs that you'd end up with a soggy base. I also think you might be overdoing the cherries soaked in Kirsch by having two layers.

I think you need to do a bit of a practice run with soaking cherries and mixing them in with your cheesecake mixture, see how it holds together.

I'd be tempted to serve the cherries on the side. You could even flambé them.

Do you plan to crush up the biscuits and set with melted butter or just use them as a layer on the bottom.
The first cheesecake mix might not set on soggy cherries.
It will also take hours to fully set
as you will need to set each layer before adding another or it will
just be a soggy mess.

That sounds like it could be lovely with the improvements PPs have suggested. I’d lose the glitter though.

Thanks thats really helpful everyone, I will go with choc cookies and a butter base and forget the cherry base, I was avoiding a cherry top because i wanted to make it look smarter.
I am curious about the flambe cherries, can you tell me more and would I flavour the cheesecake mix then so it isnt plain?
I looked at the trifle but didnt fancy the chocolate custard much, it sounds really rich.
I cant do a trial as I have tons to do before next weekend so I have no time plus we would never eat it!

I have just made three chocolate cheesecakes for the freezer. My all time go to recipe uses a bourbon biscuit base. Crushed bourbon biscuits and butter, no issues with the cream.
The topping is soft cheese, lemon juice, vanilla, icing sugar and whipped cream. I then stir in melted chocolate. It cracks and sets. Swirl more melted chocolate on top and add fruit as you like.
I've made this dozens of times and it goes down very well.

I often use bourbons, I just crush them in the normal way and add melted butter. Works really well.

I think a cherry topping actually will look quite smart OP. Very festive colour and you'll have the contrasting dark base and pale cheesecake layer.
It will be lovely. I've used Oreos as a base for a chocolate cheesecake before.
First time, I scraped the cream out, but the second time, thought life's too short for this! and just reduced the butter. Came out perfectly so I certainly think you can use bourbons if you like

You could do a mix of cheesecake and trifle - build individual or one large in a bowl so the weight is less of an issue. Start with cherries, then cheesecake, then cheesecake base, then cheesecake, then more cherries. Same layers - different order! I would also top with grated white chocolate to contrast with the cherries...

@Travelcrazy The melted chocolate sets in threads as you stir it into the cream and cheese mixture. It doesn't actually look much but when you eat it there are threads of chocolate rather than just a chocolate flavour. I usually save some melted chocolate to swirl on top. PM if you want full recipe and I will dig it out.
