Dairy free, not vegan

A family member needs to be dairy free, but works manually in the open air and loves meat, so very much “man food”! And is young and has a very healthy appetite.

i love to cook, and have generally adapted day to day meals to accommodate, but I’m getting a bit bored, and wondering if anyone has any recommendations for cookery books that are dairy free, but not “worthy”? 🤣

I'm not familiar with any cook books that fit the bill for you, but I wonder if looking to cultures with low use of dairy and high use of meat might help? East Asian cultures don't use dairy particularly heavily and have plenty of meat based dishes. Similarly Mexican food is quite meat forward but typically only uses dairy sparingly as garnish or topping easily removed or substituted.

River Cottage ‘Light and Easy’ cookbook. It is dairy and gluten-free but includes meat. And the gf can be swapped for normal wheat flour, etc.

Don't know if any cookbooks but I'm meat eating a DF if you'd like some recipes?

I like Pippa Kendrick's Intolerant Gourmet, but it isn't just dairy free it is (can be) everything free.

Dairy free is fairly easy these days. Pure spread, oat milk and oat cream, lots of other alternatives. I cooked DF for someone with a severe (epipen) dairy allergy for several years and just adapted. Violife parmesan substitute is ok.

Mediterranean type foods lend themselves to being dairy free. Spanish Chicken, pasta dishes, coq au vin, beef bourguignon, currys (use oat cream if a creamy one that isn't coconut cream).

And I can point you in the direction of some DF products too if you'd like. Lidl Mayo is DF and much nicer and cheaper than the vegan ones.

Mindful Chef recipes used to be dairy free, although I think they've added some vegetarian ones now. Their recipes are www.mindfulchef.com/healthy-recipes

We just cook as normal but just sub butter for flora, milk for oatly and we tend to avoid cheesy dishes like macaroni cheese as they don't really work. We have a lot of Mexican food with coconut yogurt instead of sour cream and make curries with coconut cream or milk.

Thanks all. I was trying not to write too long an OP so I didn’t include, but maybe should have mentioned, he doesn’t like cheese or yoghurt anyway. I have, as I say adapted most family meals and they work quite well. I think looking at East Asian cuisine might be a good shout, and I’ve remembered that I have a Fuschia Dunlop book that has some terrific recipes that I’ll look out. Thank you to all replies!

Steak and kidney pudding made with beef suet so no dairy in the pastry.

Stew with dumplings

You could look for a jewish kosher recipe book - where milk products and meat products cannot ever be mixed there must be lots of meat-only dairy-free things.

MrsAvocet · 03/12/2023 15:15

Just dairy free is pretty easy. Lots of regular meals are naturally dairy free - casseroles, stir fries of various types, lots of curries, roast dinners or any "meat and 2 veg" type meal, tomato based pasta dishes and so on. And there are lots of quite acceptable dairy alternatives these days. You can make pastry or cakes with dairy free spread or use a variety of "milks" for white sauces and so on.
Cheese is the only thing I think is really an issue. In the 20 years I've been cooking dairy free I have never found a palatable cheese substitute. But otherwise it's not difficult once you get used to it and the range of free from items in most supermarkets is brilliant compared to how it used to be.

SiouxsieSiouxStiletto · 03/12/2023 15:39

I don't really like dairy substitutes either.

This Chicken Ciaccatore with Crispy Potatoes is so lovely, I'm sure it will fill them up Wink

EveryKneeShallBow · 03/12/2023 17:27

Thank you all. I shall definitely follow these up.

And good old bangers a mash with onion gravy is always a winner on a cold night.

EveWinter · 03/12/2023 19:28

Tonight's DF dinner was a bit of a concoction with things that needed using up from the fridge. Pasta, cherry tomatoes roasted with garlic and salt and pepper, sliced sprouts added to the baking tray for the last minute. DF sausagemeat with truffle from the butchers dry pan fried. Walnuts, parmesan substitute above.

It was really lovely.

The charity Heart UK has a big recipe section using dairy alternatives.

EveryKneeShallBow · 03/12/2023 19:54

Thanks for all these gorgeous suggestions.

Most vegan veg dishes go well as a side dish with meat or fish.

Try vegan/ vegetable tray bake and add met of your choice.
