Paneer advice please!

I spotted paneer on the cheese shelf in the supermarket, I hadn't seen it there before so now have a bag of cubes in the fridge. Apart from Sag Paneer ( and any great recipes welcome for that), does anyone have any different ideas? There's probably enough for two different dishes.

Chili paneer is great. Pan fry some cubed paneer coated in cornflour and spices, remove. Add quartered onions, green peppers, green chili's, saute, add soya sauce, sweet chili sauce, a tiny bit of stock, any seasonings to taste, toss paneer back in. Lovely with rice, Naan, or on its own.

Or tikka paneer - same as chicken tikka, marinate, skewer, bake with green peppers, onions, pineapple etc.

I second chilli paneer. One of my favourite meals even when I have to cook myself!

You can also do mattar paneer or a butter chicken paneer (without the chicken) which I think is a Gizzi Erskine recipe
I've also done a paneer kofta which was a mixture of a Waitrose recipe and Mowgli

Chilli paneer is definitely going to happen. I'll also do some deep diving into Meera Sodha for the future.

Use halloumi instead. I find paneer dry and tasteless in anything.

I love halloumi, but the issue here is what to do with an existing bag of paneer.

A friend of mine introduced me to mattar paneer. It is peas with paneer made in a creamy sauce. I really liked it!

Paneer also has lots of health benefits too.

Here are two of my favourite skewer recipes: classic tandoori paneer tikka or sticky mango paneer.

Palak paneer - this is a drier dish and with the just wilted spinach it feels light and fresh and healthy, but still delicious. This is one of my favourite midweek curries.

Butter paneer masala - as the name suggests this is VERY indulgent, but delightful. It's so rich and beautifully spiced.

I also use paneer in the place of chicken in a lot of Indian recipes and it's almost always successful.

I use those cubes for tikka paneer. I don't have a proper recipe but I buy the spice mix from The Spicery and follow their recipe. I make a chicken version for the meat eaters but the often steal some paneer. I serve it with naans or paratha, mint raita and either a homemade spicy mango chutney or a shop bought tamarind dip (the Maggie one). You could also fry some off until browned and then add it to any curry you can think of

I'm going to try the tandoori tikka skewers first, I have most of it in the house already, and a handy grocers with a vast array of spices just down the road for the few I don't have, will report back! Either naan or chapati I think, although I do like a paratha.

I love Jamie Oliver’s recipe for saag paneer - I think he calls it golden paneer. I like to use it in any curry to replace chicken as pp have said, or grate it with cheddar into mash, chop up some chillies, add some Kashmiri chilli powder, spread it on wraps/rotis, top with another one and fry them.

I do ‘paneer curry’ which is variations on a theme, the theme being kids will eat it. Not exactly traditional but

  • chop and onion
  • fry onion, garlic and ginger if you have it in tsp oil til soft
  • add spice paste of choice (I use a mild one, either korma or tikka or similar)
  • add tin of tomatoes
  • add chopped paneer
  • add some veg of choice (peas, peppers, spinach work well)
  • cook 20mins stirring every few mins, add little water if seems too dry
serve with rice, naan - the usual

I wouldnt replace halloumi for paneer, they have different tastes and perform different functions

I love both. Trouble is once you've fried up your paneer cubes I find they disappear very quickly,,,,,

Definitely try Mutter paneer. Easy to do. Make a base with tomatoes, garlic and spices (and onion of course) then add fried paneer cubes and peas. Could just eat this with a spoon!

My DH hates paneer but loves chilli paneer. Its bloody delicious! No other recipes required!

You can use it in any curry that you'd use chicken/prawns etc in - just add it in at the end of cooking, rather than early on.

I always dry fry paneer cubes before adding to a sauce (recipes often mention frying in oil, but if you use a non stick pan, you definitely don't need oil). Or if you have an air fryer, you can toast them off in there first.

Don't use halloumi instead whatever you do. Better sub would be tofu if you must which is closer. Halloumi has a totally different flavour and texture. I think it's better in a saucy or moist curry than on skewers. Love paneer

There is a beautiful paneer tray bake in Rukmini Iyer's Indian Express book, it's basically paneer, onions, peppers, cherry tomatoes, plus spices and seasoning of course. It's very tasty, the book as a whole is lovely too.

Nadiya does a great recipe for paneer wraps. It's basically paneer saag in an omelettey tortilla which sounds odd but tastes fab. Called Kati rolls.

Paneer is one of my favourite foods, so we eat it a lot.

I make the Dishoom chicken biriyani, but with paneer.

A 'butter paneer' or paneer tikka masala - basically make a makhani sauce and add paneer (and whatever else you like) - the Dishoom makhani sauce recipe is good but there are others if you google

Last week I did paneer and veg wraps - bake cubed paneer with a mix of spices (cumin, coriander seed, tumeric, mustard seed, I use a bit of pav bhaji masala, but even just a garam masala you like would be nice) until it's a bit charred, then serve in wraps with whatever salad veg (onions, peppers, tomatoes) you like plus yoghurt/mango chutney/fresh coriander/chillies.

I did the tikka skewers today, marinated for about 6 hours, served with chapattis
Really good, thanks for the recommendation! I shall ponder which recipe to use the rest on at the weekend.
