Instant pot veg soup not nice

CarolHath · 28/11/2023 18:01

Got an instant pot last week. Made amazing stew in it last week and perfect potatoes. Made veg soup in it on Sunday and it really isn't nice. Any idea what I did wrong? I've had to bin it. Tastes like overcooked slow cooker slop

Anyone?

What recipe did you use?

CarolHath · 29/11/2023 07:38

@Whataretheodds I didn't use any. Just chopped up all the veg, sautéed it, added the rest of the ingredients and pressed the soup button

Too much liquid? Did you saute all the ingredients?

Whataretheodds · 29/11/2023 07:42

Did you use onion/leek? Garlic/ginger? Any stock, seasoning?
How long did you cook it for and how long does instant pot suggest you cook it for?

Unabletomitigate · 29/11/2023 07:43

Add more salt, and add fresh herbs at the end.

UnaOfStormhold · 29/11/2023 07:51

The default soup setting is way too long on my model, I would give it a few minutes at pressure at most. Also don't forget that you need less water compared to stove top cooking as none of it escapes.

Veg soups needs something

Mixed veg with a stock from boiling ham hock is lovely

Or just veg stock cube and nutmeg for mushroom or leek and potatoe soup,

corriander for things like carrot ,
cinnamon for squash and sweet potatoes based
Pesto with a pea based soup, cheese for a sweet corn one ,
I am having a block with the beetroot - but you get the idea - google recipes and add a dash of sone or other spice
all finished with a splash of cream before serving

Did it have cabbage/greens/broccoli in as those can give that overcooked taste

HoneyButterPopcorn · 29/11/2023 08:33

I make nice (veggie) butternut squash and minestrone soups in mine. I suppose the ‘trick’ is cooking everything up like normal on the pot before adding the stock and cooking for - 5 mins or so. Ot doesn’t take long.

Ah that explains it. I put it on the soup setting for 30 minutes 😂 . Plus maybe too much liquid. Had it all sautéed. Lots of fresh herbs, onion, garlic etc it tasted awful. And I can still smell it off the lid

Take the rubber seal off the lid and wash it and also rinse the steam valve. Should be ok.

i found soup from a soup maker was definately lacking.

CarolHath · 30/11/2023 12:22

@HoneyButterPopcorn thanks. Will try this. Ah I was hoping the soup would I be even tastier than done on the hob

Always try to look for an actual recipe until you get the hang of what it can do and how long things take. We have a couple of sealing rings as one smells of pulled pork as we use it for that every couple of weeks.

My best Instant Pot use is frozen chicken breast, I add 2 cups of boiling water, salt and pepper then any amount of frozen chicken breast straight in, no trivet, no weighing but best to use chicken breasts roughly the same size. Set to manual high pressure for 25 minutes, it is cooked and can be sliced or shredded. You can release as soon as the 25 minutes is up but I usually put mine on an hour before I need it and it can sit on the keep warm. Obviously the more you have in the longer it takes to come up to pressure.

Great for sandwiches, pesto pasta even putting into a stir fry but we tend to use it for a roast dinner because then everyone gets chicken breast and no carcass to deal with.

anon2134 · 30/11/2023 19:16

It's the onions. They always have that taste and smell.

CarolHath · 30/11/2023 20:22

@sardinesatemysandwich ohh def trying this. I don't eat meat and it's such a waste doing a whole roast chicken for DH and two small children.

@anon2134 hasn't happened with the onions in other dishes though

@CarolHath I have done it with just 2 chicken breasts, I have sons aged 20 and 17 so they love a hot chicken sandwich for lunch and will often do the chicken in the IP.
