Christmas buffet for 10?

We have invited both sides of the family over for one day in the Christmas week. There will be about 12. I am thinking of doing a buffet as we can't all sit round the table and we will be sick of roasts by then I think.

This is a very rare occasion, and so want to make it quite special. I mean good, homemade food.

How can I build a buffet? What needs to be included? What things can I make and ideally freeze ahead so I can pop some in the oven on the day?

I would like to make some sausage rolls in advance, but something a bit different rather than a plain old one e.g. I once had one with chilli jam in it.

Grazing table? - not to every ones taste though?
Salmon? Bit 80s?
What about quiche - not bog standard but perhaps salmon (I'm eating salmon at the moment so it's on my mind!)
One of them glorious studded hams as a centre piece?
A raised pork pie - one of those massive ones.
Sausage rolls - with black pudding? Or apple? - do it as a plait or in a Christmas tree shape?

The glazed pigs in blankets from this link are wonderful. It’s unusual enough to be interesting, but still a crowd pleaser. We tested them last year at my parents Boxing Day meal, and even with a fairly conservative eating crowd, they went first. With cocktail sticks it could work canapé style to avoid cutlery.

Did you want options for people to put on their plates and eating with cutlery while standing, or canapés?

We usually have a few people over for a buffet during Christmas week. I always do a Gam but I'm thinking of doing a Salmon this year too.

Mini Queices made in a muffin tin
Sticky glazed sausages or stuffing balls
Sliced gammon or meat board
Cheese board
Garlic flat bread
Salad
Nice warm bread from the oven
Chutney
Hummous/tzatziki/babaganoush and dipping veg
Bacon cheese pastry turnovers (very easy to make)
Posh crisps/nuts/crackers
Pasta salad (chicken,bacon,sweetcorn and mayo, pesto and tomatos)
Tarted up pizza with rocket on top.

It depends a bit on tastes but I'd probably go go with a quiche something like leek and bacon would be nice and aim to serve it warm. Easy enough to make in advance and freeze. If you want something a bit special I don't think you can go wrong with a seafood platter but I wouldn't say it's a natural mash with sausages rolls and quiche. I usually carve a gammon but that may have been done to death over Christmas. Perhaps some marinated chicken skewers, could marinade in something like tandoori paste to make them different from all the Christmas offerings.
I often do a loaded flared bread topped with Gorgonzola and figs that's always popular. A few nice salads, cous cous with roasted veg, pomegranate seeds and pistachios, a home made apple slaw, a simple potato salad, a Greek salad.
A big tray of miniature garlic roast potatoes and some nice fresh bread.

Pulled pork feels a bit special and can be a) frozen ahead and b) eaten with a fork only. The problem with a big ham, most salads etc, are that you need a knife and then it all becomes a faff to find somewhere to perch, balance the plate etc.

I made sausage rolls last year and they were a cut above normal.
Flaky pastry. Roll of sausage meat down the middle. Make a dent lengthways along the sausage and put a line of chutney /chilli jam/ hedgerow jelly.
Seal with beaten egg and glaze.
I did exactly the same using vegetarian sausages (tescos Lincolnshire ones).
I made them weeks ahead and froze them to bake up on the day.

I just saw a video for brie and cranberry crinkle pie...a rectangular quiche made with scrunched up filo pastry. It looked easy and impressive.
