Cooking veggie lasagne for the first time ???????

Just wondering if I cook the veg the same as if i was cooking it with meat.
Ive given up red meat so am doing it all veg and tomatoes.
Ive got aubergine, peppers, mushrooms and courgettes and tinned toms. Can I just bung it all in the pan and simmer it for 20 mins before putting in a dish to oven cook with lasagne?

That's what I do! Don't worry if the veg is still a bit firm as it will obv. keep cooking in the oven.

(For another time I'd recommend using baby corn. Gives good colour and adds a bit of texture)/

I use puy lentils in the ragu and also layer in some thinly sliced tomatoes & courgettes with the lasagne sheets. Yum. Nicer than my meat lasagne IMHO.

Roast the veg in olive oil then mix in with the tom sauce for an even richer flavour

I use quorn mince too and also layer in courgettes next to the pasta sheets (thinly sliced and uncooked courgette, the pasta 'soaks up' the courgette 'juice' as they cook, if that makes sense). Also often bung in handfuls of spinach (raw) next to the pasta because again, the pasta soaks up any water that comes out of the spinach. Lots of cheese sauce is a must, too. Mmmmmm.

Yep all those...but put a layer of Mozzarella cheese and add a sprinkle chilli/crushed black pepper for spice.
