It seems these days that we are eating the same dishes week in week out and we are in desperate need of some inspiration, nothing too fussy.

The meals we have the minute go along the lines of:
Roast dinner
Lasagne
Spaghetti Bolognese
Vegetable stirfry
Chicken Stirfry
Omelette
Chicken Curry
Beef Fajitas

Here are some of my dinners:

Cauliflower cheese

Courgette and aubergine bake
(slice and pan fry courgettes and aubergine, then layer them in an oven dish, with tomato sauce in between the layers. I sometimes also put in slices of mozzarella) Tomato sauce is onion, garlic, olive oil and a tin of tomatoes btw, not tomato ketchup!

Barbecued pork chops

Pork chop or steak per person
Marinate for as long as you can in Worcestershire sauce and barbecue sauce (Heinz or HP or Sainsbury's own are all good), and season with black pepper

Bake in the oven, turning every 10 minutes or so, until they are brown and the sauce is sticky

Chill and wraps

Chilli con carne as usual, but instead of with rice make into wraps, with plain yoghurt and grated cheese

And how could I forget shepherd's pie?!

I made this last week slightly differently - I fried the mince and onions as usual but added a little curry powder. Not so much that it was hot but just enough to give it a spicy taste. I also added several cubes of frozen chopped spinach. For the topping, instead of mashed potato I used mashed celeriac, into which I stirred two chopped, leeks that I had fried in butter, and handful of grated mature cheddar

(Home made) Lamb kebabs with couscous and salad.

blanche green beans and rinse in cold water
put in baking tray, with few cherry toms, olives, anchovies
put salmon fillets on top
drizzle olive oil, lemon juice, chuck in lemon quarters
bit of pepper
put in v hot oven for about 10 mins and check if fish cooked
lovely with chilled white wine and new pots

that sounds lovely worthit, must put that one past hubby, I'm the easy one to cook for, I'll try anything, its hubby that needs more convincing xx

ribs with marinade - chuck in whatever you've got - 5 spice powder, worcestershire sauce, ketchup, honey, mustard, soy..

Pork/Chicken parcels

Pop a pork steak or chicken breast on a square of foil. Add some sliced mushrooms, peppers & onions. Salt & pepper to taste. Add a teaspoon of single cream and a dash of white wine if you want it to be a bit luxurious. Dot with butter & fold up foil into a parcel.
Bake at 180 (Gas 4) for about 25 mins until meat cooked through & serve with jacket potatoes, rice or loads of veg

Easy cheesy Chicken

stuff chicken breasts with lower in fat mozzarella, sliced red peppers and fresh basil before baking in the oven for a tasty dinner. Serve with rustic wedges McCain less carbs than a jacket potato per portion.

Spicy Tomato & Chickpea Soup

Soften 1 large ONION and 1 large clove of GARLIC in 1 tablespoon (about 2 dessertspoons) OLIVE OIL. Then add 1 teaspoon GROUND CORIANDER, half a teaspoon GROUND MIXED SPICE and less than a quarter of a teaspoon of CHILLI POWDER. Cook for a few more minutes.

Add a can of drained CHICKPEAS, two mugs of light VEGETABLE STOCK and a mug of PASSATA (half a bottle). Also add a teaspoon of SUGAR ( I always add this with tomatoes - it makes them seem less acid) Cook for about 15 min

Then add quarter of a mug of RICE and simmer until the rice is cooked. Add some freshly ground pepper. You can thin it down with water or more vegetable stock or more tomato and make it more or less spicy as you wish.

My menu for the week (looks a bit like yours!). Keep in mind I'm trying to defy the increasing prices in Tesco and keep shopping expense to under £70 per week!

Thurs: Salmon and spinnach spaghetti (made with creme freche)
Fri: Enchilladas
Sat: Rainbow trout, new potatoes and green beans.
Sun: Roast chicken
Mon: Cold chicken, baked pots and salad
Tue: Bacon, vegetable and pesto pasta and garlic bread.
Wed: Steak, homemade potatoe wedges, roasted vegetables (courgettes, peppers, mushroom)

Chicken broccoli pasta bake

Cooked chicken, pasta & broccoli. Put into an ovenproof dish. Add half a tin chopped tomatoes or half a jar of salsa if you like it a little zingy. POur on some cheese sauce (I use bisto cheese granules), add a little grated cheese & bake for 15 mins

2 onions - chopped, 6 garlic cloves, crushed
2 tsp dried chilli flakes either 1 bunch flatleaf parsley - chopped or 2 tsp of parsley, 1 tsp of cumin. whiz together until it looks a little like dry pesto. Add 900g/2lb minced lamb, mix. squish into sausage shapes and put on a skewer, should make 8. spray a griddle or fry pan. cook. serve with salad, pita bread and couscous. It goes down a treat. ds thinks they are posh burgers.

Spinach and tatty bake
