Left over rice from 2 days ago - still good for fried rice?

I have been sick and just remembered I have leftover rice in the fridge that I had planned to make into fried rice for lunch. If I made the rice Thursday night, I can turn it into a quick dinner for tonight right?!

I bought steaks as a treat but cannot face it so dh and kidscan have leftover mince with spaghetti but again, can't face that for myself.

I'd eat it, but make sure it's absolutely piping hot from cooking.

It will be absolutely fine.
Rice is fine in a fridge for 4 days and if stored correctly can last longer.

Yes, it's pretty common to reuse 2-3 days old rice in most Asian households. Just make sure it's reheated till it's piping hot.

I once gave myself food poisoning with reheated rice so I wouldn't ... But it would probably be fine.

It's fine as long as it went into the fridge quickly when it was made and is properly reheated

As long as you cooled it properly it should be fine. The problematic bacteria in rice isn't destroyed by heat so getting it piping hot won't make a jot of difference if the spores have already multiplied.

This ^^ is much, much more important than how hot you reheat it.

The Bacillus Cereus bacteria develops odour free toxins that aren't destroyed by heat. The toxins develop at room temperature, which is why any unused boiled rice should be cooled and refridgerated as soon as possible.

I ate some of DS leftover mash the other day that'd been in the fridge best part of a week. Nuke it enough it'll be fine, saying that I'm not sure you're meant to reheat rice 🤔

What is considered to be quick enough re cooled and refrigerated?! It's a minefield. I am the least paranoid person about this stuff... except rice (and lettuce).

I cooked it, we ate dinner and I put it in the fridge probably about 60-90 minuted later. Couldn't have been more that that as even if I am moving a but slower overall I still tidy up etc promptly after dinner.

As someone else has pointed out, it's perfectly normal in Asian cooking to boil rice a few days in advance to allow it time to cool and dry out before frying, so this idea that you simply can not and must not "reheat" rice is a myth, and the dire warnings about doing so stem from the fact that organisations like the NHS have to err on the side of caution for fear of people poisoning themselves if and when it's done without due care and attention.

Provided it is cooled, refrigerated, and heated thoroughly second time around, it's perfectly fine.

I would not go reheating already cooked rice that was cooked by someone else, i.e. three day old takeaway, because you don't know how long that rice was sitting around before it was fried, and you can't trust that it was stored and prepared properly to begin with.

An hour or so before it was put in the fridge should be fine. That's what the NHS advise:

Thanks all. I have decided it will probably be fine as it was i the fridge pretty quick (good thing i was in charge - dh has annoying habit of forgetting and we have to throw things that have been on counter all night!!!) . Will be super boring but just what I need right now.
