Have some pastry to use up with some of these ingredients- suggestions please?

We are defrosting our freezer and need to use up some short-crust pastry. So I thought I'd make a flan or quiche!

I have a fairly fussy 2-yr old to feed and have these potential ingredients:

bacon
Cheddar cheese
mushrooms
cauliflower
leeks
sweet peppers
milk
double cream
chicken fillets
various beans & lentils (e.g. pinto, red lentils)
various herbs/spices

Any ideas please? I'm not a very good or confident cook so need simple instructions if possible!

I'd saute the onion, garlic, bacon and mushrooms. Make a cheese sauce (can do it really easily by just mixing cheese and double cream - water down with milk if need more quantity).

Then add cauliflower and leeks and cover with pie crust.

Bake in oven for 20-30 mins.

Oooh great! To make the cheese sauce I assume I need to heat the double cream to allow the cheese to melt, or can I mix them cold and leave it for the oven to melt them? Thank you! xx

If you then have some stock and also some pastry left over you could make dp's leftover pie.

Cook chicken fillets (or use left over cooked chicken), add anyleft over veg. Cover with stock and put pie crust on. I tend to use thyme with chicken, maybe bay leaf if you have one. Can also top pie with sliced or mashed potato. And can stick beans or lentils in if you want.

I would heat cream and leave cheese to melt in it first - it might not mix well if done in oven.
