Boxing day buffet ideas (ideally for freezer!)

Hi, I've (stupidly) decided to invite all my in laws over for Boxing day afternoon. After having my family for Christmas Eve (European celebration) and Christmas Day.

I live an hour from the closest city so won't be able to do a morning dash for bread etc. Has anyone got good recommendations for buffet style food I can prepare in advance and freeze - happy to cook in oven on the day but I don't have a microwave. There will be at least 25 of us, including a couple of veggies.

I was thinking home made sausage rolls and a couple of salads as a starting point, but would welcome other ideas. I usually just do a morning trip to the village bakery (will be shut) and butchers and do rolls and sausages when they all descend!!

These pizza pinwheels always go down well. I make two versions, one with the ham the other without for my veggie daughter

For an easy Boxing Day buffet I usually serve whatever meat we had the day before served cold. I keep the pre baked baguettes in for easy bread option, but sometimes I do make Delia’s sage and onion bread if I’ve time to make more of an effort (it’s not yeast based so not majorly labour intensive though). For salads I do a coleslaw as cabbage and carrots can be bought before the holidays and keep well so will be fine on Boxing Day. And finally I usually do a cheese board as that’s all food that keeps well and just needs to be assembled.

Also for the veggies, you could freeze a quiche.

A big cheeseboard with all the trimmings? With crackers and some part baked rolls or baguettes.

A dessert board with mince pies, lebkuchen, stroopwaffeln, florentines etc - Aldi and Lidl will have lots of this sort of thing

Buy part baked bake at home baguettes, and do sausages. Or a big slow cooked gammon / ham for hot rolls. Big bowl of a winter slaw (non-mayo, use lime juice and ginger) and good sauces.

I've just been looking at a cheese and onion pie that can be made ahead and frozen.
