Dessert for a diabetic/pre-diabetic

I've been tasked with making a dessert suitable for diabetic and pre-diabetic people.

Please, not a fruit platter!

A nice dish of some sort.

Any ideas?

What kind of diabetic people? DH is type 1 and he eats all kinds of desserts - his sugars are well controlled and he just adjusts his insulin. We've got black forest gateau later!

Type 2. I don't know exactly how they control it, but I do know that the pre-diabetic people have been trying to reverse it by diet. I believe at least one of the Type 2 people has also been trying this. None are massively pedantic about it. Day to day strictness, yes, but accepting the rare lapse when it is warranted, like at a special family occasion, for example. So I could make a sugar-laden dish, but I'd rather not.

Difficult to make a dessert without sugar tbh!

How about a dark chocolate mousse - the higher the cocoa content the less the sugar.

I know it’s for gestational diabetes but will cover all types. Another resource is the stevia/truvia website. You can get truvia for baking from a large supermarket and use that instead of sugar.

Mandarin Royale is not too difficult - it's essentially a trifle without the cake layer. Use sugar free jelly, add canned mandarins to the jelly (canned in juice not syrup) and then whipped cream on top. Grate a small amount of chocolate on top for decoration.

The cream has fat but no sugar, so it's a very low carb and low sugar dessert. Have a look at the M&S mandarin Royale for inspiration.

Raspberries, strawberries or blackberries with something high in fat should do the trick - good quality ice-cream or clotted cream.

I'm not diebetic but I make desserts no added/low sugar for health reasons. You could try:-

Truffles made with mashed medjool dates and cocoa powder (roll in combos such as coconut, crushed nuts etc.)

A rice pudding with a fruit compote (choose fruit such as pears which are sweet by themselves)

Banana custard with whipped cream and sprinkled with toasted coconut. You could even pour this over leftover bread and turn it into a bread pudding.

Whipped feta with fresh figs.
