Gluten free celebration cake recipe

I've never baked a gluten free cake. Young adult DD is newly diagnosed with coeliac disease and has a birthday soon. I've not had a chance to practice baking gluten free cakes yet so the birthday cake will be the first one and I'd like to use someone's tried and tested recipe. We have all alternative flours available - chickpea, gluten free regular, coconut, buckwheat, rice. Plus xanthum gum and gf baking powder so hopefully we're food to go.

The Becky excel vicky sponge recipe comes out perfect every time. You could decorate with buttercream or fondant?

There used to be a Victoria sandwich recipe on the back of the ‘doves farm’ gluten free flour bag I used to use successfully.

If they still make that stuff!

I never had to beat it too much either which was great as I don’t have an electric whisk!

PS I always just use gluten free plain or self raising flour. I have never needed or used chickpea/rice/buckwheat etc

Hi, I'm coeliac. Use your favourite cake recipe. Swap in the same amount of Dove's Farm Freee self raising flour blend (which already contains xanthan gum). Add a bit of milk to the batter as g/f flour absorbs more moisture. Honestly, it will turn out great.

Otherwise, agree with PP that Becky Excell's recipes are always brilliant.

Becky Excell has loads of celebration cake recipes- nor sure how many are on her blog, but her "How to bake anything gluten free" is great. Sponge cakes are easy to make and you'd struggle to tell that they don't contain gluten (bread, however, is another story).

I just do a 3 egg, weigh in their shells - then the same weight of caster sugar, Doves Farm GF SR flour, Stork. 2 TBS milk, 1 tsp glycerine and 1/2 tsp baking powder. The glycerine makes it super moist.
This tastes and looks like a 'normal' sponge which is so important when newly diagnosed. I've entered a sponge like this in a baking competition against gluten sponges and won

Thank you everyone. I made the cake and iced it and was able to find coeliac friendly sprinkles/ chocolates for the top. It didn't rise a lot but I usually fail with that when I make regular sponges, so nothing new.

@CMOTDibbler I didn't have any glycerine but I'll get some for next time and try your method.
