Vegetarian pie suggestions

If you were making a vegetarian pie, what would you fill it with? I really fancy making a pie, but am a bit directionless. I don't like beetroot or goats cheese, but like pretty much everything else.

You could make any flavour you like

Are you talking pastry or suet, are you talking bottomless or enclosed, are you talking mash potato top?

So you can make a combination of lentils mixed with whatever flavours you're aiming for, so for example a curried flavour to mimic keema mince, or moroccan flavours to mimic tagine mince flavours (I had this in a suet pie in a restaurant once)

You could use tofu, there are some flavoured one, or paneer, these would mean its very protein based. Feta and spinach is a good one, lots of strong flavours

I always love a cheese and potato mixture but it needs to be really cheesy. Or cauliflower cheese pie.

One of my favourites is roast fennel, gorgonzola and walnut. It's more of a flan but it's delicious. It's a Sarah Raven recipe.

Nigel Slater's cheddar cheese and onion pie (from the Guardian back in 2003, I just googled to check!) is delicious. Perfectly fine to make it with ready-made pastry too, despite what the recipe says.

Mine is extremely boring but very tasty! I roast potatoes and carrots, saute onions and frozen veg, add a bit of stock, soy sauce and herbs, and simmer until it thickens, add it all to a Pyrex dish with some tender stem broccoli on the top and puff pastry. I’m not really into cheesy pies, this is the first and only pie I’ve ever made and always goes down well in our house.

Feta, spinach and filo pie is my favourite.
But do also like a veggie cottage pie with loads of more traditional root veg and sweet potato top.

In Eastern Europe they make pies (burek / banitsa) with various vegetarian fillings such as potatoes, pumpkin, spinach and cheese. They are really delicious with a few dollops of natural yogurt. Definitely try to look up some vegetarian burek filling recipes.

Thanks for all your suggestions. I made Nigel Slater's cheese and onion pie suggested by @TrobadoraBeatrice which was (predictably delicious) and I had everything in to make it already. And so many other delicious sounding recipes which I'll be making over the next few months.

I love spanakopita. The version I do is two leeks cut in semi circles around 1cm thick. Rinse and fry (no need to add oil as they’ll be all wet). Add a big bag of spinach and fry until most of water evaporates. Turn off heat. Add a block of feta crumbled small. And a small block of mature cheddar grated. Stir with black pepper and a grating of nutmeg. Taste and adjust seasoning as needed. Traditionally wrapped in filo pastry but I love it wrapped in puff pastry. Serve with a side salad.
