Gluten free weekend on the budget

I am hosting some friends this weekend. I've just found out one of them is gluten intolerant. Could you please suggest the gluten free ideas for breakfast, lunch and dinner? I am thinking to serve gluten free pasta with salmon on Saturday and roast on Sunday? Please help CakeFlowers

Be careful with gravy- use cornflour to thicken it, not ordinary flour.

A chilli? Tomatoes beans chilli cumin cocoa onions garlic smoked paprika. chorizo and meat if you’re not vegetarian.

Scrambled egg for breakfast- normal fast for most people, a gluten free part baked ciabatta for the intolerant one.

Basically avoid processed foods and you’ll be fine.

Bacon, sausage (most supermarkets have gluten free) egg and Heinz beans with gluten free bread or free from gluten cereal.
any roast dinner (not with yorkies or stuffing) .
all supermarkets tend to have a free from section that includes pizzas/garlic breads, we have chilli, pasta bake with gluten free pasta, curry and rice, sausage and mash 😁

Aldi used to do lively gluten free part baked rolls. The brand was something with sch at the beginning. Like Schloer, but not!

you could do soups and rolls for light meals. Ham and green pea, spicy tomato. Carrot and coriander, leek and potato…

gluten free is easy for meals for a weekend. It’s day in day out, and snacks, that’s the challenge!

My friends with allergies or intolerances always politely bring a tub of something to eat just in case whenever they're invited to peoples houses knowing we might not get it right

Gluten intolerant or coeliac?

I make gluten free roast dinners as standard. Yorkshire puddings are really simple just find a recipe that uses cornflour (becky excells is the best) gravy - thicken with cornflour or use gluten free gravy granules.

What kind of salmon and gluten free pasta? Not my kind of thing normally, but gluten free pasta can be a bit more brittle than normal pasta. I'd be tempted to do a rice based dish instead personally.

Breakfast - if they are coeliac they probably have a preferred cereal but for a cooked breakfast most normal supermarket sausages are gluten free, bacon eggs etc.

Choose naturally gluten free foods instead of buying overpriced and underwhelming gluten free options. Porridge for breakfast (jazz up with fruit, seeds, nuts if you wish.. bircher style). Jacket potatoes for lunch and rice based meal for dinner, curry or chilli (Hugh FW's baked chicken curry is my absolute favourite). Salmon and rice would be better than salmon and pasta.

Breakfast:
Cereal/ granola/ oats / chia seed / eggs & bacon

Main meals:
Plan around the carb: rice/ quinoa/ potato / polenta

If its porridge for breakfast it needs to be gluten free oats if they are coeliac.... normal oats aren't gluten free due to production methods.

Stick to potato or rice rather than GF pasta.
Breakfast, a cooked breakfast is easy to do, and roast if you change out teh gravy and yorkshires, then all GF

I agree and just remember oats need to be GF if coeliac- I struggled with normal oats annoyingly

I don't bother much with GF bread or pasta myself but that is just because I never much liked it anyway.

Breakfast- scrambled eggs, ham, bacon, fruit, yoghurt, frittata, omelettes

Lunches- nice soups or salads with (yes) GF rolls

Dinners- I stick heavily to rice and potatos as my carbs. So I love a coq au vin with mashed potato for example; stroganof with rice; etc. Yes do be wary of hidden gluten- when i first went GF I had soy sauce and was in crippling pain.

This was my menu yesterday (fairly normal day of eating)

B- natural yoghurt, tinned peaches, sunflower seeds and nuts
L- spinach pear, blue cheese and walnut salad with sliced ham
D- roast chicken with chicken juices, roast potatos, carrots glazed with honey and butter, peas and cranberry sauce.

Some coeliacs (including me) can’t tolerate gluten free oats either, so granola and porridge would be out for me.
I have nutribrex for breakfast with fruit and yogurt.
if you use anything out of a packet check the label. My friends usually WhatsApp me photos of the labels before cooking

Shakshuka is a yummy gf breakfast. Lunch - soups, salads, fritata, cheeseboard with oatcakes, grapes, celery etc.
Dinner- agree with the advice to avoid gf substitutes and use naturally gf ingredients, a sage and butternut squash rissoto, a meat or veg curry or chilli with rice. Maybe you could do the salmon as a tray bake with new potatoes, or with stir fried veg and rice noodles, dressed with lime juice, fresh chilli, garlic etc

Just cook things that don't include grains in most meals and ask them to bring their favourite GF bread that they can make themselves.

For breakfasts, I would do eggs or bacon with baps/bread (GF bread) and fresh fruit on offer.

Lunches generally if we host we do out and about, meaning everyone has to sort themselves out. But if at home, do soup and rolls (GF roll/bread) or crustless quiche and salad.

Dinners are anything you'd typically serve with rice or potatoes - chicken/chickpea curry and rice with salad, chilli with rice, sausages and mash with green veg. Sunday roast you have sorted.

Just check all processed ingredients, like curry sauce, sausages (many of them are GF).
