chicken thigh tray bake recipes - no wine!

Having friends over for dinner on Saturday, quite a casual affair so nothing too fancy. Quite like the idea of a prepare in advance, bung it in the oven traybake type thing but many recipes contain wine. Our friends do not drink alcohol and avoid food made with alcohol even if it's burned off in the cooking.

Any recommendations of things you've made and are really tasty? Have a couple of packs of skinless/boneless chicken thighs in the freezer which need using up...

Just replace the wine with chicken/veg stock.

We often do a 'paella' tray bake (apologies to any Spanish people on mn!).

Potatoes into wedges
Courgette
Red onion
Peppers
Chicken thighs
Aubergine
Oil for coating
Then sprinkle on paella spice mix.

Serve with lots of chunky sliced bread (usually a part bake type), lemon wedges and aioli.

This is my specialist subject!! My regular rotation of traybakes with chicken thighs include:

Red onion, potato, brussel sprouts, honey mustard (recipe - just add potatoes)
Red onion, chorizo, orange wedges, potatoes - (recipe)
White onion, sweet potatoes, water(!) - (recipe, replace whole chicken with thighs)
Feta cheese, dill, rose harissa (recipe)

Chicken stock instead of wine and a halved lemon and some garlic cloves roasted in the tray, and you'll be fine.

Chicken, mushroom, garlic or not, courgettes. Add a little or a lot of balsamic vinegar for that tangy taste. Can add butternut squash if you like it, though prob not if you’ve gone the whole way to a balsamic sauce. Serve with spinach or cavolo nero

Tarragon chicken is nice if people like an aniseed flavour

Paprika chicken thighs browned off, stir in rice and flavours, Put in oven dish, water and bake in oven, simple and tasty

Loads of options, thank you all. I have tried substituting stock for white wine in the past but it just wasn't the same.

Peel sweet potatoes and cut into 1.5cm thick slices
Peel and quarter onions.
Add veg to roasting tin with oil, garlic, rosemary and seasoning.
Roast at 200C for 15min.
Cut each thigh fillet in two and sear over high heat.
Turn veg over, and add chicken thighs.
Squeeze over juice from one lemon and smoked paprika.
Roast at 180C for 15min
Add chicken stock.
Cook for further 20min. add more stock if looks too dry.

OP Try lemon juice or - depending on other ingredients - orange juice. They will replace the acidity of the the wine. To give a stronger citrus flavour, grate some lemon or orange zest on top.

You can get alcohol-free wine. It's not usually very pleasant to drink, but it might be OK in cooking. But I suspect that lemon juice - maybe with some stock as well - would be nicer. I'd add garlic and herbs, too.

Balsamic vinegar is another option - good if the dish contains tomatoes - but I'd definitely dilute that with some stock, and proceed with caution.

A splash of white wine vinegar or rice vinegar in place of white wine works wonders!

I also love a chicken traybake with a tikka spice paste made with yoghurt - super tender chicken and loads of flavour, yumyum

You can use any recipe and simply leave the wine out, it just won't be quite as nice.

We had one last night. There were carrots onions, butternut squash, sweet potatoes, corn on the cob chopped into pieces, red peppers. Drizzled with oil and then had a sprinkling of a peri peri rub. Cook for about 30/40 minutes and then add the chicken thighs (that had been in a peri peri marinade overnight) in a layer on the top. Cook for another 30/40 minutes until the thighs are cooked through.
