Vegans! What’s your favourite Christmas recipe?

Just that really. Something very delicious.

Everyone coming for Christmas dinner is veggie, with one vegan. So I thought I might as well make everything but one dish vegan.

One added problem is that one person also doesn’t like mushrooms!!! So I need something that has no mushrooms and is vegan, which I’m finding tricky.

I have made Jamie Oliver's vegan wellington before, which is very tasty, but it is a faff and does contain mushrooms. I'll put the link here in case it's of use to anyone Grin

I always make a lentil loaf, but jazz it up with cranberries/ nuts/etc. for Christmas. I know it sounds a bit dull, but it actually tastes great and even my meat-obsessed parents love it. Easy to make too - there are a bunch of different recipes if you Google.

I made this recipe at the weekend and it was so delicious we've decided this is what we'll have on Xmas day. Mushrooms are cooked then added in at the end so you could serve the non-mushroom eaters first then add the mushrooms.

I used Vivera chicken breasts and Oxo meat dress chicken stock.

My go-to would be a mushroom wellington or nut roast with mushrooms. However, this is lovely, and a bit of a showstopper too (if you can make it look pretty; mine is usually quite patched together).
Goodness knows, icing sugar on it is not for me, but the rest is delicious.

I am vegan. I used a vegan chicken substitute and meatfree checked stock.

Thanks for clarifying. We try not to worry at a lot of overly processed things but we do love the Vivera chicken breasts.

OP, I would check if the guests are ok with a meat substitute as I know a few veggies don't eat meat because they don't like the texture.

I made the Gaz Oakley stuffed butternut squash a few years ago. It did have mushrooms but you could leave those out. There were plenty of other fillings so they wouldn't be missed. Is a bit of a faff though as it had loads of components but went down a treat even with the carnivores.

I've made Rose Elliott's chestnut roast. Buy ready cooked chesnuts (check they aren't sweetened). I add sage (put a leaf on top of the loaf is you have fresh leaves) and red wine to season. Can be made in advance and then bunged in the oven. I serve with onion gravy (fry onions, then add a tbsp each of marmite, tomato puree and soy sauce in about half to one pint of water (adjust to your taste). Add a slug of red wine if you fancy that. Thicken with cornflour just before serving.

I don't think any vegans are going to eat a recipe involving salmon!

I do a wellington. What goes in varies from year to year but it usually involves leeks, mushrooms, pine nuts and butternut squash.

The Jamie Oliver Wellington suggested in the first reply is not suitable for vegans but you can easily buy vegan puff pastry.

@civetcat definately trying that chestnut raost.
I have four vegetarians (no vegans) and four meat eaters at Christmas. Some great ideas here. One thing I have found in the past is that the meat eaters pounce on the veggie mains as well so I've learned the lesson and do more than I think I need.
