This is going to sound daft but I had something yummy whilst in hospital and would like to make it at home- how?

It was called "cheese on toast" so it should be simple but I'm stuck!

it wasn't just cheese, it was a piece of bread topped really thickly with some kind of cheesy mixture and sliced tomato and it looked like it had been baked til the topping was set and the bread was crunchy.

I don't know what else was in the mixture, but I've wanted to make it ever since. Maybe it's because it was the first meal I'd had after giving birth (and I was ravenous) but it was really tasty, and I thought it would be a cheap healthy meal idea.

Any ideas what the cheesy stuff could be, and how to make it?

well my best cheese on toast is whisked egg with a huge block of cheese grated and then a heaped tsp of mustard powder. I toast my bread lightly 1st before putting it on.

Well Welsh rarebit is kind of like that. You make a really, really thick and cheesy white sauce with butter and flour and loads of cheese with mustard and a bit of beer and pile it on top of the bread before baking it in the oven. Does that sound right?

Probably a thick bechamel sauce.

Bit of butter, tablespoon of flour, milk - whisk together over the heat until thick, allow to cook for a few mins. Season, take off heat, add grated cheese. Pour over toast, put tomato on top, more grated cheese, then whack under the grill until brown.

The sauce will need to be v thick or it'll just run off the bread!

grate some cheese mix with a bit of double cream (and onion if you want). put on bread. stick under grill. yum.

Great ideas, thanks! Carmenere I think maybe you're closest to what they attempted to do but they probably made it closer to castiles cheesy bechamel. Can't see a hospital faffing about with beer. I'm going to try it, never made a sauce before, eek!

had something even more delicious at the cafe in clothes shop Shoon in Bath - the cheese had chilli in it and the really chunky bread was layered in avocado first. served with lovely crisps...mmmmm

You'd think I'd know about this stuff, I live in Wales.

If I made it without the beer it'd be ok for blw wouldn't it?

See my disclaimer re: just having given birth, they forgot my tea and toast so this was several hours later and I was so hungry I could have eaten a scabby horse between two back doors. It was lush!

while i was in hospital with DS i had the best rice pudding! the food was actually all really good.

I also loved the hospital food but to dh it was just all right.

I made the welsh rarebit, and it was .... ok. It wasn't anything like the hospital one, so now I wonder if it was some kind of cheesy potato mix instead? It was really piled on there.

I may write to the hospital kitchens and ask.
