Huge scones

Where I live in Northern Ireland most bakeries sell wonderful huge fluffy light scones in various flavours. Almost as big as my hand. I can't seem to make them does anyone know how?

Use more scone dough, cut them thicker.

Use self raising flour plus baking powder.

My DM used to make huge scones ( expert level NI church scone baker) and I wish I had learnt from her before she passed away.

Buttermilk , baking powder and soda bread flour were involved.

Scones in NI are wild. I agree.

....but at the same time they're so big I think I actually find them mildly threatening. You don't really need a meal.

I haven't seen them anywhere else- and part of me is secretly glad. Though if you handed me one of the giant monsters now I'd absolutely eat it, all covered in melted butter.

I've made massive scones by using a larger cutter and getting half the amount out of the dough

I make big fluffy ones by not rolling them out or usi g a cutter.

I hand form them straight from the mixing bowl.
and avoid overworking the dough this way too.

It may seem obvious, but pre-heating the baking tray is key to getting a good rise.

You need to cut them bigger, it's not an ordinary size scone that suddenly morphs in the oven to giant size, you have to start with a much bigger piece of dough. Hate them myself, would prefer to eat two of a more reasonable size.

Not obvious at all, I'd never heard that. Will definitely give it a go!
