I'd like to eat vegetarisn dinners more often, but I don't have that many vegetarian or vegan recipes. Would you please share your favourite one with me?

Ohh

I think my favourite is Mexican beans

Fry up gently an onion (!for 2 ) garlic chilli to taste and tomatoes ( about 2 or 3 big ones per person ) with whole cumin seeds and after about 20 mins add tinned beans ( kidney )) or precooked pinto and cook though ( I think I add salt too )

Serve with flat breads eg Nan / I make mine with sr flour mixed with a little water or milk to a dough and then rolled flat and fried

Add trimmings at table - cheese and corriander , sour cream also works

Or much simpler is a pasta sauce with goats cheese
Fry the onions and garlic , add tinned tomatoes and cook for about 20 mins , then stir in to melt some goats cheese ( ours comes rolled in pepper - but you could add your own pepper or chilli to taste )

If you're not completely veggie, you could fry up some pancetta cubes or lardons and add to the lentils. Delicious! There's also a vegan version somewhere on BBC GF.

I also love spaghetti aglio e olio - though for top flavour, add more garlic than you think you should, more parsley than you think you should, and more parmesan than you think is healthy.

Does pescatarian count? Tagliatelle with cherry tomatoes, basil, shrimp, garlic and chilli flakes is a quick tea time winner.

I was going to say this, I also make a similar version adding courgettes and peppers but leaving out the marmite and serving it with couscous.

Off the top of my head there are a couple of great baked gnocchi recipes in there and a lovely one with lentils, leeks and cheese

Chop up feta cheese, sun dried tomatoes, toasted pine nuts or cashews, 1/2 bunch fresh dill, a few fresh mint leaves very finely chopped, sping onions and cooked, squeezed spinach (I just heat frozen spinach in the microwave and then squeeze all the excess water out of it. It tastes fine.) If you dislike any of these ingredients, you can just leave them out.

beat 2-3 eggs and add some black pepper and a small grating of nutmeg, a pinch of mild chilli flakes too if you like.

Brush filo pastry sheets with butter and layer them in a baking tray on top of baking paper, so that there are about three sheets on the base and the rest are layered to spill out over the sides of the tray. Mix the chopped ingredients with the beaten egg and put into the middle, then cover with the overflow sheets of pastry, rippling them or crumpling them a bit so the top is quite loose. brush with a bit more butter and bake for 25 minutes until golden brown. Serve with salad. Looks spectacular but is very easy.

Also love lemon, courgette orzo.
Bake or air fry slices of courgette till they're nice and crispy.
Cook orzo, drain and add back to the pan. Stir in half a tub of garlic and chive soft cheese, a stock cube and some boiling water to make the sauce. Add as much lemon juice as you like and I also add some garlic granules and chilli flakes. Once all warmed through add your crispy courgette. I quite often also add some quorn chicken pieces to bulk it out a little.

I've also been making ramen but a cheats version that requires hardly any actual cooking. I use a carton of Itsu Ramen Miso broth, heat that through, and add some of their frozen veggie gyoza and pour it over udon noodles that I've heated in the microwave. I usually add some bok choy that I've wilted in a pan and some grated carrots but you can use any veg. And I top it with a soft boiled egg, some sliced spring onions and crispy chilli oil. Takes 20 mins if that and it's really tasty and satisfying.

The gado gado potatoes and the cheese/shallot tart are firm favourites here. And yes to the lentils and feta one.

Favourite depends on what mood I’m in, but this is lovely at this time of year and really comforting. You can make extra of the lentils and use as a bolognase type sauce too.

Creamy leek pasta is a staple in this house too - cook pasta, meanwhile wash and finely slice a couple of leeks, soften the leeks in a mix of butter and oil with a little garlic, keep stirring and slosh a bit of the pasta water in every now and then. By the time the pasta is cooked the leeks should be all softened down; then you can add some cream, grated cheese and black pepper and stir in the pasta.

Also love the baked cherry tomatoes and feta in a dish, swirl it all together and stir through pasta idea which I got from here.

Look up Healthy living James. He has a great Sweet potato and Black bean stew Recipe. I usually replace the kale with frozen spinach as I always have it in the freezer. Also I just use a bag of frozen sweet potato chunks. Quick and easy , and very tasty

We do cheats loaded nachos. Tin of taco beans, tesco nacho kit, cheese,guacamole, sour cream.

Heat the beans till the sauce isn't so runny, pile on nachos with the salsa sachets, add grated cheese, bake til cheese bubbles... serve with the other stuff.

Enchiladas also done with a kit and whatever roasted veg you like again a tin of taco beans.

@BattleofBeamfleot I second that shepherds pie, I've made it about half a dozen times (albeit with "normal" potato mash) and every single time it surprises me with how delicious it is, given its simplicity.

So many good recipes here, but my fave is still the 70s classic nut roast from Cranks cranks.co.uk/recipes/nut-roast/. When I make this people are always surprised how good it is because nut roast is such a cliche. Really easy to make and adapt (by adapt I mean add cheese).
