Hi, please rescue me from the soggy, claggy disappointment of my dumplings. What's the secret to these fluffy clouds of joy?

I like dumplings to sit on top of a casserole and cook them with the lid off so the top goes crunchy. Make the mix quite moist and use proper suet is my top tip.

Yes, I use vegetable suet but they always end up craggy

2x self raising flour to 1x suet and a pinch of salt, water til dough is just sticky and make them into smaller balls than you think... vegetable suet (atora) is fine, but have found it needs to be a little wetter than with beef suet.

That’s great you are using suet. It could be that you are over mixing them, the less handling the better and like a PP said don’t remove the lid when cooking

6oz flour
3oz suet or cheese or a mix
2 heapy tsp baking powder
season with salt, pepper, herbs whatever

Have your stew boiling, with lots of liquid, have the oven hot

Mix the ingredients with enough water to make a soft and sticky dough, mix just enough to do the job. Tip dough onto board and chop into the right number of pieces. Don't do any rolling. Drop dumplings into stew, put the lid on and wait 15 mins. Take lid off and bake for another 15 mins.

Once the wet stuff hits the dry stuff you have to act quick.

I use half suet to flour and mix til quite wet, I don't rolll them I use two spoons to dollop the sticky mixture onto the casserole and cook without a lid until crunchy on top and fluffy underneath usually about 25 mins.

I do half veg suet to flour, some salt, and some herbs. Drop them into the stew (on hob), cover, simmer for ten mins, then flip them over and simmer for another ten mins. Nice and fluffy every time.

I add a pinch of bicarbonate of soda to mine. They fluff up lovely. You do have fo just add a pinch though otherwise they taste very bitter.

I really want stew and dumplings now. My mum used to make awesome ones with suet and mixed herbs.
