Bain Marie… glass bowl shattered! Lemon curd…no more😩

Just that really…saucepan was on a very low heat with water simmering away. Glass bowl with my 5 lemons, butter and sugar merrily being whisked. Then, a massive crack and runny lemon curd everywhere! Whole bottom of the bowl just fell out!
Now, I’m not sure I want to risk it again. It’s never happened before. Thinking if l use a metal bowl it might taint the curd.

Anyone else found this..got any advice? Thanks x

I always use a melamine (I think that’s what it’s called - I have a whole nest of about six different sizes and colours) bowl. Doesn’t affect the taste of the curd.

a metal bowl should also be fine. Commercial kitchens use them for most things.

Ah, thanks. I do have a set of those melamine bowls too..all different colours stacked inside each other. I’d never have thought to use them. Thankyou. Although..not sure the biggest one “red” would be large enough.
I’ve always used a glass bowl like my mum…but maybe time to change.

Oh dear what a shame!

I make mine straight on the hob, in a saucepan.
It's always fine so far.
There are recipes that don't use the bain-marie method.

Hopefully you'll be able to make it successfully next time.
Bet it was a pain to clean up though.

And I remember now…l made it in a saucepan last time and will do the next time…when I’ve got a spare hour or so…😍
Although, it did surprise me as I’ve done a Bain Marie before and never had an issue, so no idea why it happened today.

Sometimes a glass item develops a fault and it’ll just go

i had some borsalite (sp) glass dishes (like Pyrex but much thinner) mine decided to shatter when the Christmas Dinner vegetables were in it , just knocked it on the sink very lightly and it was a travesty.

DC weren’t bothered, the roast potatoes and Yorkshire puddings were safe. This was carrot and sprouts.
sprouts and glass not a tempting option 😏

I use a metal bowl, it doesn’t “taint” anything.

Get a KitchenCraft non stick bain marie from Amazon. I always use it for lemon curd. 😀

Was the glass bowl sat on the bottom of the pan?? Mine sits usually in a sieve or I make a trivet from foil so it isn't, otherwise heat if pan - even on a low heat - will be too much.

I always use Pyrex (is that what you mean by glass?), and sit it directly in the saucepan, but choosing a size/shape that means it's bottom is well away from the bottom of the pan. Never had a problem yet. I do have a bit of a hankering for a vintage enamel bain Marie though.
