Gluten free cold lunch ideas- not sandwich

Looking for sandwich alternative lunch ideas for my teen when she’s out, they need to be gluten free and she has no access to a microwave or kettle so needs to be able to be eaten cold.

any ideas would be appreciated, at the moment she’s living on salad but is getting a bit bored of it.

How about
cooked salmon with potato salad
hummus and taramsalata or baba ganoush with rice cakes
selection of cheeses with gluten free crackers
corn tortilla wraps
sushi with tamari sauce instead of soy sauce

Kikkoman gluten free soy sauce is pretty good, sold in supermarkets.

I’ve just been and got a thermos flask while food shopping, the little fold up spoon has caused great excitement 😂

for any recipe with soy/Worcestershire sauce i already have gluten free alternatives at home so that’s not a problem, or I use coconut aminos as we have a soy allergy in the house too and it’s a great alternative.

I just want to go back to this, OP:

as it took so long to diagnose her she views food as an enemy, something that makes her ill so it puts her off being adventurous when she out in case she can’t get to the toilet

I feel for her so much. It was bad enough for an old gimmer like me, but for a teen - with all the issues around toilet access at school and various places - it must have been (be) a really difficult time. Add the pandemic into the mix, and it's easy for people to become quite isolated and housebound, and being online a lot isn't all it's cracked to up to be if you fall in with 'negative' groups.

I find MN (if you stay away from some of the extreme weight loss stuff) is a very good source of ideas, and pretty positive. Posters love sharing recipes and ideas. Best of luck to you and your DD Flowers

I do 'tinned salad': tin of tuna, tin of mixed beans, tin of sweetcorn. Add lots of fresh chopped parsley and dressing of your choice - olive oil and lemon juice or balsamic vinegar is nice. Can serve with tomatoes/cucumber/carrot if you want more variety/extra salad.

Vietnamese rolls are GF. Lots of youtube videos on how to roll them and easier than you'd think. Covered in cling film they can be made the day before also. I prefer them vegan, but am a meat eater! You can add teriyaki chicken, tuna, pork or just veg and serve with a satay sauce or a lighter dipping sauce.

Some keto/low carb recipes are GF also. Swapping bread crumbs for almond meal is simple for a crumbed coating. I did a fake KFC, oven bakes chicken thighs recipe which I used to keep hot in a eating type thermos when I worked in different places each day.

I made this for a picnic with a friend who’s a coeliac. We had it with hummus, Parma ham and roasted peppers, tomatoes, red onion and courgette. Absolutely delicious.

It's only a cheap book but found it really helped me with learning to cook for husband. I make a quiche using the pastry from the pork pie recipe in the book. There's also couple other ideas in there. You can always do batch and freeze.

I've taken to doing a stew in the slow cooker. GF with the right stock and can clear 4-5 of my 5 a day in one hit
