Bread - ultra processed

I am trying to cutdown the amount of ultra processed food my family have. DC love bread- white bread , and they eat loads. Thought may be those baked in store would be better because they have shorter shelf lives, may 1-2 days. But just checked that they also have emulsifier. So are they equally bad?
Is home baked the only option? Have busy day to day life so really want to find easier way other than home baked to avoid Ultra processed bread.

It’s not the food item, it’s how that item is made and what ingredients are used. That’s why purchasing different types of bread from different places, will allow people to eat bread that isn’t UPF. The thread is not about avoiding bread or cutting it out but finding bread that isn’t UPF

But it’s following the overly simplistic ‘all UPF is bad and must be avoided’ logic.

We buy sourdough bread at the supermarkets, which is made by independent bakers, we have never heard of - looking at the ingredients, it seems to be proper sourdough.

We were less keen on supermarkets’ own bread, after DD worked in one’s bakery. The part baked bread came in frozen, and could be a year old! In fact, she was told to bake frozen bread, past it’s sell by date, and when she refused, she was threatened with a disciplinary! DH rang up HQ’s legal department to ask if this was official policy? DD didn’t hear about disciplinaries again in that regard.

I have a bakery near me. Greggs 🤣

Just a tip for the Panasonic recipes. The current ones have a lot of sugar in them. If you use good yeast (I like the allinsons tins) and flour, it's really not needed. The older models managed fine with much less and I usually left it out unless I was making a sweet loaf.

I bought one of these to help with slicing..it helps to keep it fresh too (Panasonic here also)

Looking at Panasonic bread maker. It's much more expensive than other brands. Is it worth it?

I bought a top of the range Panasonic for £30 from Facebook Marketplace. It's worth a look as they come up all the time.

But it’s following the overly simplistic ‘all UPF is bad and must be avoided’ logic.

why would you want to include UPF in your diet if there was an identical product next to it on the shelf that wasn't UPF? That then allows you to reduce your % of UPF which is the idea, not elimination of all UPF

PickAChew I have an old model from around 2003/2004 and I made the brioche bread the other day - saves money on shop brought. I found that I reduced the sugar in the recipe to a quarter and it was fine, with 3 eggs and butter it was delicious. My dd 1 was visiting and said when toasted it was like eating toasted croissants - I know the dough is very similar.

Ive just put a loaf on to make..

Probably a stupid question but I’m new to all this and I am trying to cut out UPF, but bread is the one thing I’m struggling with, is there a wholemeal sliced loaf that fits the brief that can be bought from Tesco or Sainsburys?

Sainsbury's Taste the Difference multi seeded wholemeal is the best one. Slices are a bit thick but make toast to die for!

Much appreciated @muddyford will put that on my shopping list!

Even without a bread machine, it is quite easy to make your own with flour (wholemeal, spelt, rye, ...), half the weight in water (so if using 500 gr flour, use 250 ml water) , salt or not, fresh yeast , and a lot of forearm work! Then you can add a bit of oil to make it more elastic.
My trick is to wet a clean tea towel with hot water to cover the container to create a hot moist environment. Leave in the hottest place in your house. Knead again, and this time, criss cross the top with a sharp knife.
There are some really nice bread cooking books. Put one on your Christmas list.
