Best way to cook frozen veg so it’s not soggy?

Everytime I try and use frozen veg, like broccoli, spinach, butternut squash, sweet potato etc it just ends up mushy or soggy.

What’s the best ways of doing it? I have just got a bigger freezer so have more space to store things so would like to get some frozen veg for convenience really.

Sauté the veg first

I don’t use frozen broccoli, butternut squash, peppers and things like that, because I never like the texture. Because vegetables have a high water content, the cell walls will rupture and destroy the crispy texture. I do like frozen spinach, but more for curries, or sauces, where the spinach is meant to be wilted anyway. Peas, broad beans and edamame freeze well.

I wouldn't expect frozen veg to be crisp. That's not what it's for. It's for cheapness and convenience.

Roasted in a hot oven works for some veg. It still gets quite soft but also caramelised. This is the case with peppers, aubergine, courgette. Tbh broccolli I would just do from fresh.

I'm fine with lots of frozen veg but never stuff like broccoli or cauliflower.
I'll use frozen peppers in something like chilli but nothing where I'm bothered about the texture.

Ditto fruit. Fab for smoothies though

It works for soup.

(Not broccoli though)

Some veg freeze better than others

Edamame, peas, corn, baby broad beans, pre chopped onion - great

Sweet potato, squash, carrots - ok, best if blending

Spinach - ok if blending

Broccoli is ok roasted. Green beans are nice stir fried. Spinach you need to squeeze water out of after cooking (or add it to something like a rice dish where the water will be absorbed). Frozen mushrooms IMHO are only good for a blended soup. Aubergine, courgette, cauliflower all not great. Avocado is just gross.
Frozen peas, sweetcorn and edamame are all good. Peppers ok if chopped small and mixed into something, as per PP.

Roast it all ! Plenty salt and lemon juice first

Onion, mushrooms are OK if you are going to saute them a lot.
Butternut squash OK casseroled but otherwise no.
Peas, broad beans, edamame beans - absolutely brilliant, can be treated like fresh.

Frozen leaf spinach is also excellent for adding to curries, casseroles etc at the end - and no more packets rotting in the fridge.
