Looking for your tried and tested pumpkin soup recipes please!

My granny used to make it every year. She passed away last year and I haven't been able to hunt down her recipe but keen to make it from scratch this year.

A masterchef professionals contestant shared their recipe on instagram stories so I jotted it down. It is beautiful. I couldn't find these specific pumpkins and found it works just fine with butternut squash.

I literally chop a load of pumpkin, a large onion (or two depending on how much pumpkin there is) into big chunks, a couple of garlic cloves and roast until soft and browned. Then I make a stock with either a chicken or ham stock cube or sometimes one of each if I'm making a big batch or home made stock if I have any in. Then I mix the two and blitz. Really easy and very tasty. I add chilli flakes afterwards to taste as not everyone in the family likes it spicy.

I'm sure it isn't as unusual as the disarrono recipe but:
Cheap as chips big supermarket Halloween pumpkin
Carrots (about 1/3 volume if the pumpkin)
Garlic cloves
Olive oil
Seasoning
Stock or Water.

Roast the washed chopped pumpkin ( incl skin but without seeds) with chopped washed carrots (incl skin) and garlic cloves (without skin) in olive oil on a medium heat until everything is soft.
Tip it all into a big pan and add water or stock to just cover and simmer for 20 mins: and blitz: season to taste (generally less seasoning required if you used stock instead of water).
Thin with stock if needed. I recommend cumin as well as salt and pepper for an earthy rich flavour. You can add onions (wedges without skin) to the original roast for sweetness if liked.

If you wash the strings off the seeds, oil and season them, you can roast them at the same time as the pumpkin for a tasty crunchy snack.
