Parmesan parsnips are amazing

Peel parsnips cut into finger size, par boil for 5 mins then drain.
Mix 50g grated parmesan with 50g semolina and half a teaspoon of pepper
Add parsnips.and make sure well coated lightly oil baking tray, spread parsnips over and put in oven at 190 for about 25 to 30 mins

I chop the parsnips lengthwise into quarters, or eighths if they are especially fat. Sometimes I chop the core out, if it looks woody. Then I place them in a shallow ceramic dish with olive oil, which coats the entire base of the tray- probably about 2mm deep. Then sprinkle lots of salt over them, and drizzle honey and shove them in the oven on gas mark 7 until they are crispy and also soft and cooked.

I do about the same as @DinosaurOfFire only I drizzle them with honey and then turn a bit to cover by oil.

Roast Parsnips.

Cut into large pieces, boil for four minutes in well-salted water, then drain and leave to cook and dry.

Put goose fat into a deep baking tray in an oven pre-heated to 220c and give 5 mins to heat through.

Carefully add parsnips to dish, turn over to coat in oil and return to oven for 45 minutes.

I do this but also add wholegrain mustard and a little lemon juice - it's amazing.

Another to agree with @DinosaurOfFire and @pizzaHeart . Cut the parsnips into batons ( not too thin - take out any woody bits from the middle ) and then a bit of olive oil and honey and roast. My opinion ( others are available ) don't cut them too thinly otherwise they can go from delicious to burnt v quickly.

This is our family's favourite parsnip dish, although i use plain flour rather than semolina

Thank you everyone! I did the roasted ones with a drizzle of honey and they were fab! When I'm not cooking for others im going to try the Parmesan ones for me and my husband cos they sound so good too.
