And preferably a dish that doesn't all have to be done last minute.

Does such a dish exist?

I think the reason that a lot of fish recipes have to be done last minute is that fish overcooks easily, so if you cook it ahead of time you can't warm it up without it going really dry. That being said, it cooks really quickly so it shouldn't be too hard to prepare it all ahead of time and then just pop it in the oven for 15 mins while your guests are having their starter, or while they're having a drink and some olives (if not having a starter).

If you live near a brilliant fishmonger then definitely try making the whole baked turbot from Moro, it's the last recipe in the first link I pasted above. It's almost impossible to find a whole turbot that's really fresh, otherwise.

If you are out to impress, you can't beat a whole turbot baked with lemon and bay leaves. But if you want something with no last minute fuss, what about lobster mayonnaise? 🦞 🦞 🦞 🦞 🦞

I suppose the tuna is a bit last minute if you’re serving warm, but you can also make a delicious cold dish out of this. Last time I made it I served with rice and an Asian salad prepped in advance.
It’s also great with green beans and buttered new potatoes.

I've done fish wrapped in grease proof paper parcels before now, it's all a bit more forgiving as you can wrap it all up and have it ready to go in when people arrive and they will also hang about a bit (a short while) if necessary.

This is a good lunch one - white fish fillets wrapped with smoked bacon/Prosciutto and placed in a oiled oven dish with cherry tomatoes, some fresh oregano and more olive oil.

Prep the whole thing then fling into the oven while having drinks. Serve with fresh crusty bread.

Well I went with the Moro turbot recipe and it was amazing. I made the sauce beforehand so there was minimum faffing in front of guests, and served the fish direct from the oven to the table where I dished it up. I felt proper cheffy!

It cost just under £40 from my local fishmonger, so was quite spenny, but came from the sea around here and fed 6 people really well. It was amazing, so thank you @Xiaoxiong who directed me to the recipe, and @AdaColeman who confirmed that turbot is a lovely fish to cook and eat
