We all love a good homemade soup right?

I'm looking for something different to my go to's, which I've listed below.

Chunky Smoky Bacon Minestrone
Broccoli and Stilton
Carrot & Coriander
Butternut and Chilli
Leek and Potato
Turkish Lentil

Inspiration please ☺️

I love a classic chicken soup, reminds me of home. I usually boil the bones of a chicken (after a roast or having bought a rotisserie one) to make the stock. Soften onion and sometimes leek in a big pan, add the stock along with sliced carrot and chunked potatoes. Cook veg until soft and then partly mash the veg to break down and slightly thicken the soup. Cornflower mixed with milk added in if it needs further thickening. Then add whatever chicken meat is leftover. Fresh herbs always good - parsley, dill, tarragon. Simple but lovely.

Fantastic winter soup - I make it in a deep wide lidded pan. Melt as much butter as you think your arteries can stand and pack the bottom of the pan with cut up/quartered parsnips (2 or 3), quartered onions (1 or 2) and fill the gaps with peeled garlic cloves. Fry until roasty, turning pieces as necessary. Sprinkle over a tablespoon of flour, a dessertspoon of turmeric and a teaspoon of chilli flakes and let that brown and cook a bit. Pour in a litre of veg stock, more if needed, and cook until all is soft. Liquidise with a stick blender. Season as you like. Amazing.

Yellow soup

2 onions, 1 large carrot, 1 medium sweet potato, 1 yellow pepper. Diced and sweated in a bit of oil and butter. Add enough stock to cover the veg plus a bit. Simmer 10 mins. Add a handful of soup pasta and a drained tin of sweetcorn. Simmer until all cooked.

Roasted tomato soup (you really do need to roast the tomatoes tho)

Unblended leak and potato (rather than smooth).

I recommend the curried lentil parsnip and apple soup recipe on BBC Good Food. It's so tasty and feels super nourishing and comforting.

Sweet potato and coconut milk , stock and spices of your choice but we normally go for cumin and chilli. It’s so silky smooth and delicious.

Chicken, leek and apple.

Start with an existing chicken stock & stewing chicken, just to a point where the meat is cooked but still soft. Put aside. Caramelize apple slices in butter. Separately saute leek and onions in butter for a base. Add chicken and aromatics. Add stock, apple juice and apple cider vinegar. Towards the end add apples, cream and a good quantity of calvados.

I’m planning on making this today - I’m sure I’ve got pearl barley but know I haven’t got mace though so I’ll probably use a tiny bit of allspice. Never made it before but it is my sort of soup (I hope).

This is a substantial soup – serve it with a salad and some bread and it’s a meal in itself. As the barley simmers with the vegetables, it thickens the broth and gives it a creamy texture. You can certainly use pearled spelt in place of pearl barley.

My favourite soup is Pea and Ham.
Boil a piece of smoked gammon with a few peppercorns and then strain the stock, add in an onion and a couple of potatoes and cook until soft. Tip in a bag of peas (saving a cup full) and then blitz. Add in the saved peas and shred in some of the gammon. Season to taste and I sometime stir in a spoonful of mint sauce.

It’s a lovely bright green colour and my kids call it witches brew!

I really like The Unlikely Lads soup from the MN cooking book

Fry onion and garlic in butter and a glug of olive oil. Add 500g of mushroom and cook until brown and soft. Season then add broccoli and veg stock. Boil, then reduce heat and simmer for 20 minutes.
Whizz with a hand blender, then swirl in double cream.
