All in one, reheatable meal ideas please

Hello, please inspire me...
I need ideas for meals I can make on advance and leave for DM to heat up when she collects a DC from school and takes to an activity. Something where she doesn't have to make a side, she can just pop a portion on a plate for him and it all reheats easily with no faff.
Eg, this week I left them with macaroni cheese and cherry tomatoes for the veg.

Challenge is that DC doesn't like any other kind of pasta bake, or pies like shepherd, cottage, fish. Also not keen on stews.

Likes rice dishes but DM worried about reheating those. (Personally I do reheat rice but don't want to argue the toss as she's doing us the favour of collecting, feeding, ferrying.

Can you think of anything else I could try?!

Could she reheat a dish served with rice but use those pouches of rice you do in the microwave?

otherwise

frozen jacket potato (microwave for 5 mins) then put topping on

fresh pasta (3 mins) and pesto and peas (put in with the pasta)

a hearty soup (maybe with beans/lentils) with bread rolls

Lasagne

Pizza and side of cut up carrot/peppers/cucumber you could leave in a tub in the fridge?

Ah I hadn't thought of microwave rice- thank you! Yes that would open it up a bit.

Soup he only likes tomato but he will eat my homemade version of that and I could try to sneak in some lentils...

Jackets are tolerated.i had also thought of setting the oven timer so jackets come on while I'm at work and are ready when they get home..I guess I could also do this with an oven-risotto or similar but worried about leaving the rice in liquid til the oven comes on would muddle the cooking times.

Curry and naan

Thai curry and rice noodles (the thin ones, you just pop those in boiling water so it’s not a faff)

Baked beans on toast (toast can be prepared just put hot beans on top)

Slice of gammon, mash and sweetcorn

Would he eat sandwiches or wraps or something on toast?

Pouches of microwave rice, especially the flavoured ones like Spanish or Caribbean etc, with extras added to them, such as flaked tuna or cooked salmon fillet, chopped up sausage or hot dogs, diced salami or ham, cubed cheese.

If you buy fresh pasta, such as linguine, and you have a liquid sauce such as bolognaise, you can heat the sauce up and cook the pasta together, either in a saucepan or the microwave as long as the pasta is coated in the sauce.

Slow cooker things you could put on in the morning then serve with microwave jacket potato or microwave rice?

Mischance · 25/09/2023 14:03

Stews with potatoes and veg in - a total meal - just whack in a bowl/on a plate and microwave. You can make a large one and freeze it in portions.

Chilli with potato wedges instead of rice? I would personally use pre-prepared from a packet but they'd only need to go in the oven?
Or shepherd's pie with lots of added veg?

Storminateacuppa · 25/09/2023 21:29

Oops sorry, reread your OP again re shepherds pie...
What about hunter's chicken ( although would probably need salad and maybe potato/ bread on the side)? We preprepare cooked chicken layerered with cooked bacon and cheese with a sauce (tomato ketchup and soy sauce with thyme and allspice) and whack it in the microwave to heat

When camping, we have served chilli over taco chips instead of rice - works well.

If he won't have a shepherds pie, I assume that means a similar "sauce and meat/veg under potato" dish won't work - I do both chicken and mushrooms in a creamy sauce, and smoked fish and brocolli in a white sauce. Put some breadcrumbs or panko on top for crunch, which may help if it's a "too soft texture" thing. Or top with shop bought puff pastry (I buy Lidl's already rolled version).

Does it have to be hot? Would slice of quiche, good sandwich or sub (cut a chunk of French stick style) or wrap work instead?

Actually, thinking of wraps, would fajita mix made so it needs reheating and he rolls it in a wrap work?

Or a lunch box in fridge with salad or pasta pesto or carrot sticks with hummus or crackers and pate work?

Or a lunchables type box that you make yourself - a few crackers, some ham or chicken, a baby bell or sliced cheddar, carrot or pepper sticks or cherry tomatoes, and piece of fruit or biscuit to finish?
