What can I bake with coconut flour?

I keep googling and there's a whole load of keto recipes but they all involve ingredients like xylitol, whatever that is.

I just want to make a cake or biscuits or something, with coconut flour because I've got some and should use it. I have lemons and eggs and baking powder and almonds, is there anything I can cook with them? If I have to use sugar, that's fine, but I think you can also use coconut flour for savoury things like cheese twists or something, but I can't find a recipe.

Any pointers?

I think you can just use sugar in the keto recipes as xylitol and sugar can be substituted 1:1 and it will still work if you find a recipe that looks good. I tried a few recipes with coconut flour while I was on a low carb diet but wasn’t impressed with any of the results.

the problem with coconut flour is that every flour is slightly different so proportion in same recipe might change.

personally i dont like it I prefer almond flour. much easier and better results

Yes, coconut flour is definitely different to every other flour I have baked with. It absorbs a lot more water. I meant that sugar and xylitol (or erythritol) are interchangeable. Coconut flour seems difficult to bake with so a lot of recipes using it are keto recipes that also use sugar substitutes. You should definitely look for a recipe that has been tested with coconut flour. I prefer almond flour too.
