Freezing biscuit/cooking dough for Christmas

Have been thinking about Christmas baking hacks to prevent the craziness in the fortnight before Christmas.

I was wondering which Christmas cookie/biscuit doughs can be made ahead of time and frozen? Do you freeze them as blocks, balls or slices?

Does anyone know if gingernut dough can be frozen

I have frozen some biscuit doughs in cylindrical tubes that can be sliced then baked. Others I have frozen in individual balls. It sort of depends if they are the type that would be rolled and cut out before baking or balled up if they were going to be baked fresh. These white chocolate miso ones are wonderful.

I have no experience with freezing ginger nut dough, but most biscuit/cookie dough is freezer friendly. Many recipes even state if they are freezable.

I have frozen it as well, easy just to slice and cook.

Never found a biscuit dough I can’t freeze. Either freeze as balls and bake from frozen, or roll into a cylinder in clingfilm and when you want them allow to defrost slightly, cut into slices and bake.

Can't speak about Christmas biscuits specifically but I regularly do chocolate chip cookies and freeze them in balls, wrapped in baking paper, then just cook from frozen - usually on the paper they were wrapped in. Thanks for the reminder - haven't done for a while and it's a good idea for something to do one afternoon and have ready for Christmas.

Freezes perfectly in a tube of baking paper and then wrapped in foil. I just cut slices off. I find cooking time doesn’t need to be changed much- maybe an extra minute or two. Particularly if the tray is a little warm from the oven most of them will have defrosted in the time it takes to slice them all.

I always freeze cookie dough too, tend to always have Jane’s Patisserie cookies in the freezer - triple chocolate are my go to!
I freeze them in balls on baking paper then put in a bag.

I haven't frozen gingernut dough but have stored it in the fridge for a couple of months without it coming to harm.

I try to pack the dough (made with an egg, as I like the texture of the finished product) in a container with little extra space at the top, then chuck it in the fridge until I fancy a few biscuits. I let it warm a bit before spooning out and baking.
