Scotch pancakes for lunch

My almost 1 year old has discovered a love for scotch pancakes but I've got no idea what I can put with them for a healthy balanced lunch. He's dairy free if that makes any difference, they are dairy and gluten free pancakes. Please can anyone help me with recipes? Thanks in advance 🙂

I wouldn't worry too much about what 'goes' from an adult perspective. I'd serve with a range of things like peanut butter, butter, veg sticks, cheese cubes, fruit etc

I used to make them without sugar and stir in some chopped spinach to the batter before cooking. Serve with grated cheese on the top, and some cucumber / tomatoes on the side.

Sounds a bit weird now I type it out, but my kids liked it 🤣

This. Food doesn't have to match. We used to put out plates with a wee bit of everything on them, cheese, fruit, a cracker, humous, a bit of sauasage...whatever was going spare. We called it a 'mouse's picnic' and none of it matched.
Just put the pancakes on a plate with other stuff.

I did wonder about peanut butter as I eat it alot myself but didn't know if it went with them. Will definitely try it though. Can't do cheese cubes as have not found a dairy free one he won't pull a face at 🤣

I wouldn't be serving shop bought versions regularly, they are very high in sugar and ultra processed. They're very easy to make with flour, baking powder, egg and non-dairy milk - then serve with fruit for sweetness.

I used to make banana pancakes for my little one at that age. I'd make them the same size as the Scotch ones so they can decide when they didn't want any more and I would put the rest in the fridge for the next day.

1 egg
1 banana
Dash of DF milk (normally oat or coconut)
2tbsp plain flour.
Blitz in a jug and cook in the frying pan.

Ham, bacon and honey can do. Cannot for the life of me find a df cheese he doesn't pull a face at🤣 really good suggestions though. He loves meat so perfect, thanks

I know whst your answer to this will be, but alternatives to adding spinach, is to mix in grated courgette or tinned sweetcorn.
It's really worth trying to make them yourself if you can.

Come on OP, I bet you could make your own. Try it and report back! (Or just try some of these other suggestions of course. I like the bacon and scrambled eggs idea, that would make a really filling lunch. Add some tomatoes for a bit of veg).

update for everyone who wanted me to try making my own pancakes. though i didnt burn down the house, i did cause an absolute nightmare washing up job and completely inedible pancakes, well dh ate them but wouldnt have dared giving them to baby😂i did say i was a menace with a frying pan! so unfortunately it will have to be store bought ones but at least ive got a good range of ideas of things to put with them now. thanks everyone for your ideas😊
