Tray bakes other than flapjacks suitable for lunchboxes

Any ideas anyone? My son doesn't like flapjacks and although I can bake regular cakes and give him a slice, wondered if anyone has some perfect recipes for traybakes that would be ideal in lunchboxes?

whnever I give ds cake in his lunchbox he eats that and leaves the rest

Your own breakfast bars containing porridge oats, pumpkin/sunflower/sesame seeds, dessicated coconut, smashed up cashews or peanuts, dried cranverries, condensed milk, bnaked and sliced up.

My DS is really quite fussy but will actually eat those like they're going out of fashion. (As do DH and I )

Lots of schools have a no nut rule for obvious reasons so you might want to check that out.
If I can't be bothered to bake or the egg girl is late then we do scotch pancakes; malt loaf, hot cross buns, couple of chess biscuits and some cheese; little jelly in a pot etc

I meant to say they work without the nuts - just adjust the other ingredients.

You cna easily omit nuts from those breakfast bars. I've made afew batches now and did some with cashews and some without, some with chopped apricots and other dried fruit. They really are nice and my 2 devour them.

ginger or cinnamon snaps - I have a wonderful recipy that is so very easy to make

set oven to gas 4 - brush baking sheet with little oil.

Put 100g of butter, 100g of sugar and 100g of golden syrup in a saucepan and heat gently - stir with a wooden spoon until butter has melted - leave for 5 mins to cool.

225 plain flour and 1 teaspoon of bicarb stirred slowly add either teaspoon of ginger or cinnamon into the saucepan.

place teaspoons of this mix onto tray and bake in oven for 10 mins - maybe 15 mins (till tops ave turned a light browny clour)

You will need to do two sheets or batches.

Will keep in an air tight tin for as long as they stay hiden

thomcat with those breakfast bars does it come out wrong without the nuts if you don't substitute something for them?

they look just what I've been searching for but dd1 not alllowed to take nuts to school in lunchbox

Cappuccino - nope, cool without nuts, you can play around with them, I used cashews sometimes, sometimes not, and vary the dried fruit.

Going to make some tomorrow after this thread.
