Okra - what do I do with it?

I've just discovered a bag of okra in the fridge which I must have fancied during last week's shop. No idea what to do with it - if I add it to a curry, do I need to chop it small or just top and tail? Parboil or not, if I'm cooking the curry itself for about half an hour?

I think that you just rinse it and chop it up and throw it in.

I would chop it & throw it in. It will thicken the curry slightly, and it will ooze sticky juice when you slice it. It's delish in gumbo too....

Funny you should say that. It's still in the fridge. My Mum is here for the weekend and went slightly green when I told her I was putting okra in the curry...

Will experiment on DH when she's gone.

Deep fry in chilli batter...or give it to a good indian cook.
OTherwise, bin it, only 1% of the population can cook okra so it is not slimy goo. And it is always tasteless.

God I used to love okra. When I lived in Egypt they cook it in tomatoes, with lots of chilli and spices. Lovely

If you cut it, it will become sticky. I'd wash it and stiry fry with lots of chilli.

You can chop it and fry it with onion, garlic and chilli - it's not too slimy that way. Or simply chop it up and put it in with rice - it cooks with the rice.

awwww, pity none (well hardly!) any of you like okra or know how to eat it! LOL It's a favourite food down south in USA (where I'm from). Don't know if you can buy cornmeal here in the UK? A fine/coarse ground corn (maize), similar to Polenta ?? www.recipes4us.co.uk/Cooking%20by%20Country/Cornmeal%20%20Polenta.htm

Anyway, when frying things like fish, we'd often dip the fish in an egg/milk mixture and then into a plain flour/cornmeal mixture before frying in oil.

So what you do with okra is cut the ends off (& discard ends) and slice the remaining okra. Now because it's sticky, you don't need to dip it in anything moist! So just dip/roll/coat it in the cornmeal (nice & easy as it's already sticky) and fry in oil. And you have a lovely tasty side dish!

For anyone who doesn't like the idea of moist/sticky/gooey okra, I'm sure you'll love it fried!

my cajun rice recipe uses okra but i never know what it is so i just leave it out. i am sure i haven't seen it in the supermarket. where abouts would i find it?
