I do but it's in my head lol. Google My Active Kitchen as I got it from there years ago and have adjusted to suit over the years

I can't personally vouch for the recipe, but this looks very well researched, and I have generally had great experiences with Ethans recipes.

What about putting butter on a cracker if you're having cheese

@bellac11 while it's true there is not one single 'proper' jollof rice recipe, and they can vary greatly, I don't think that makes this thread pointless arguing over opinions which your examples seem to be.

I would hazard a guess the that OP wants to make jollof rice, but is not from a West African background so doesn't know where to start so has asked for authentic recipes as a jumping off point. Some 'British' takes on jollof rice read to me as more like a Spanish rice, so I can see why she has asked for recipes recommendations that both work and resemble properly the dish she wants to make.

I mean forget about Brexit or deep philosophical debates, these are the key debates we should be having, jollof rice, scones, cheese and crackers etc etc!!!!

There is a professor in a US university who starts her first year students with a 'rice breaker'. She asks them how their family cook rice. This is to demonstrate cultural differences. I have tried this with people and it is interesting the varied ways people cook rice.

On jollof rice - I love it. Used to work in a building where the chef from West Africa cooked Jollof rice every single day. I had it with most things.

I have seen Jollof seasoning in Sainsbury's recently and was tempted to try it. Probably best I check out these recipes.

I like the Nigerian party style one so search for that for the ingredients.
I then blend all of the ingredients for the tomato sauce.
Boil it down till the oils floating on the top and there's not that much water.
Then add the rice turn down low and cover with tin foil tightly before you put the lid on.
Check there's no steam escaping and leave to cook.

You can search on YouTube or Google for one.
I'll share what I usually do.
2 tins of plum tomatoes, 3 big bell peppers, 1 scotch bonnet, 2 medium onions. Blend then pour in 2 cooking spoons of oil. Simmer for 15mins. Season with stock, thyme, curry, white and black pepper. Rinse rice 3 times.
Pour in pot making sure the liquid covers it with about an inch or less of sauce on top.
Once boiled, leave on lowest heat to simmer. Stir 3ce.
