Replacing tinned tomatoes in recipes

bellac11 · 24/08/2023 20:22

Im not sure I can eat tomatoes anymore but certainly not the tinned type, Ive developed acid/heart burn and despite medication am a bit plagued by it and Im finding things with tomatoes in them are more difficult than other foods

Historically I used to make a lot of batch cooked meals like curries, chillis, ragus, big mixtures of stuff that usually had a couple of tins of toms in them to bulk them out and provide the base.

Any ideas about what sort of veg I can use to serve the same purpose, I know different dishes might need different things but I used to use them so much in things as a common ingredient.

I have used cooked blended carrots and red peppers, red lentils and stock.
Similar consistency and colour to tinned tomatoes, although red peppers can also be quite acidic

With curry you can make them from stock or coconut milk.

For curries, try korma style with yoghurt?
Also try drier bhuna style curries with just a small amount of sauce, no tomatoes necessary.
with pasta dishes you'll probably need to try entirely different sauces and methods.
E.g a whole boursin cheese melted in a pan with perhaps sauteed mushrooms. Add bacob pieces if you like. Keep back a cupful of the pasta cooking water to thin the sauce so it coats the pasta well. Nigel Slater has a good recipe using skinned and crumbled sausages sautéed with garlic, Dijon mustard and crême fraîche. Serve with Parmesan cheese. You can also add finely chopped carrots to this.

Check the ingredients. A lot of tinned tomatoes have added citric acid. I like the mutti polpa as it doesn't and it's rare that I get heartburn from them.

bellac11 · 25/08/2023 18:33

I will check this actually, I wasnt aware

But the other day I heated up some cherry tomatoes and it was a bit tricky with them as well although I havent noticed it with raw tomatoes

All today its been quite bad because of the meal I had last night, it was a tarka dhal I had batch cooked and used tinned toms in it, I never usually do that with tarka dhal but did on that one occasion. Ive got another bloody portion of it to get through at some point.

Many dishes you can just leave them out.

a bit of red wine vinegar can help with flavor for soups and stews.

worchestshire sauce

pumpkin or sweet potato

If you are trying to do something like make salsa, tomatillos work for many people. Don’t just buy commercial tomatillo products without checking carefully though because many put tomato in as an ingredient.

I cut out alcohol and I can now pretty much eat anything. Prior to that my reflux was horrific.

I dont really drink. The reflux may have always been with me but silently so I didnt recognise what it was. Ive had a procedure where GERD is one of the risks and unfortunately for me I have now developed this more severely

Its bothersome rather than significantly affecting my life but I get a lot of horseness and feeling of discomfort, dont get the burning as such too often, always feels like theres something in my throat.

This recipe only uses a few sundried tomatoes which may be better (or you could leave them out). Use a bit less liquid in the stock to get a thicker consistency and use it where you'd use tinned tomatoes or a tomato sauce. (Full disclosure I'm told by my DC that it is delicious but I'm allergic to peppers so have never been able to eat it...)

courgettes might work.

every year at courgette glut time we replace tomatos for courgette in some recipes.

bellac11 · 25/08/2023 21:11

Oh Ive just thought of aubergines actually

That looks good, I might try something like that

Unfortunately the bloody freezer is unusable at the moment because of massive bags of cauli, broccoli, spinach, peas, sweetcorn and greenbeans, they have taken up so much space I dont have room for all my little batch cooked meals and I have a lot to cook up this weekend. I wish they sold thse things in smaller bags. It takes me a long time to get through them

@bellac11
Have you tried adding bicarbonate of soda to tomatoes? It takes the acid away, be careful though as it can start to go soapy! Try half a teaspoon. I always add milk and drinking chocolate too. Seems to work.

Otherwise blended butternut squash makes a nice base.
