Brunch options that can be prepared with no cooking on site

I am at a monthly morning meeting of about 30-40 people and we have a potluck for brunch. This is the USA and too many people were bringing sweet options (such as donuts and chocolate croissants) and there was never any protein or much that was healthy. I am new and don’t want to be rude so just want to bring something else. Today I brought a big fruit salad and also bagels which I sliced in half and served up with lox (sliced salon), cream cheese, capers, sliced red onion and lemon and people could build themselves a lox bagel which is very popular here in the USA. It needs to be finger food/previously prepared/ cold as there is no access to a kitchen. The bagels went down a storm and were very popular so I want more ideas. I was think quiches and salad, any other ideas for easy to put together brunch buffet items?

A platter of cold meats and cheeses, salami etc

Bruschetta (sliced horizontally toasted, rub raw garlic on one side - make in advance) and on another plate, slices of mozzarella and sliced beef tomatoes, drizzle with good olive oil and basil leaves over the top. Put tongs down for serving.

Smoked mackerel with Waldorf salad.

Chicken Caesar salad.

Devilled eggs.

Slices of spanakopita.

Halved pitta bread pockets filled with chopped mixed salad and falafel.

Platter of Indian snacks, pakoras, samosas etc with a cucumber, mint and yoghurt dip.

Courgette (zucchini) scones are a fab brunch.

Coarsely grate a load of zucchini. Sprinkle the gratings with salt and wait for 30 minutes then use a seive or cheesecloth to press out as much liquid as possible. Then mix with roughly equal volumes of self-raising flour and grated strong mature cheese, a bit of butter and a splash of milk and mix into a stiff dough. Form into walnut-sized lumps and bake for 12-15 mins in a hot oven.

Can be just eaten as-is (delicious warm from the oven, but just as nice once cold) or split and spread with a little Philadelphia cream cheese.

Vegetable samosas are usually a hit if made fresh in the morning when the pastry is all crisp.

If you can cook in advance, and are willing (or can buy pre-made) egg baguettes always work well I find. You can do some with egg and bacon, some with egg and salmon and some plain.

Otherwise I'd be going with a tray of cold meats, a tray of sliced cheese, and a selection of bagels/rolls for people to make up. Then some fruit platters on the side.
